My boyfriend just got his 1st job out of law school and is hosting a dinner at his condo for one of his boss (who are somewhat younger, maybe mid 30's). I know he's making some fancy salmon dish for dinner. I actually am an attorney as well so i'm going to have a very small amount of time to both get ready and/or prepare dessert. Please help...

Buy some lime sherbet, pre-dip in a wine glass and keep in freezer until serving time. Sherbet is light and goes well with salmon.
OR
Mix instant chocolate pudding with cool whip to create a faux mousse. Again, serve in wine glasses and sprinkle a few mini-chocolate chips on top.

Why not just make up some fruit kebobs and a yogart and choc. dipping sauce in the store. The fruit you can buy and cut up the night before and then put them on the sticks and then cover and put in frig and then the ygart sauce and choc. sauce they sell in the grocery store in the produce section just serve in a fancy bowl to dip into

maybe chocolate fondue with a sample plate of fruits, cake, and biscotti. or make a creme brulee and then torch it tableside--but please practice first!!!
