Some restaurants close for the day so they can prepare for the dinner rush, especially if it's a small mom and pop operation. However, I don't know of any in my area that close after the lunch rush.

Not all of them do. But many restaurants close between lunch and dinner just because it's not profitable for them to stay open during the slow afternoon hours.

people don't eat as much sushi during the day as in the evening.....they have to consider cost

- they run out of food, so they restock.
- so u dont eat too much, and spend too much :D
- making sushi takes lots of hard work and it tires the chefs so they need to take a (long break). and not enough chefs.
