During Deepavali, households in Tamil nadu has a special dish other than the sweets and snacks. It is known as the Lehiyam or Deepavali Marundhu. Meaning - The Diwali Medicine This is the first thing people eat after their Oil bath in all traditional house holds. Reason - This generally increases your digestive power and will also make you more immune to diseases. As people will eat a lot of stuffs on Diwali day, this is a precaution. They take just a spoon of this when they start the day. Required ( Most of them are names of Tamil herbs) 1. Sukku (25 Gm) 2. Arisi Thippili (25 Gm) 3. Kandan Thipili (25 Gm) 4. Kasakasa (25 Gm) 5. Milagu (Pepper) (10 Gm) [ You can add more Pepper if you would like to make it slightly more spicy] 6. Jeeragam (25 Gm) 7. Sittharathai (25 Gm) 8. Lavangam/ Krambu (25 Gm) 9. Pattai (25 Gm) 10. Parangi Pattai (25 gm) 11.Vasambu (25 Gm) [ You can get the above items from any country drug stores (Naattu Marundhu Kaddai) in Tamil Nadu ] 12. Vellam (Jagery) (Sweetener made from sugar cane) (500 Gms) (Slightly increase if you want to make it sweeter) 13. Then (Pure Honey) (100 Gm) 14. Gingely/ Sesame Oil (250 Gms/ 280 Ml) 15. Ghee (Boiled Butter) (100 gm/ 110 Ml) 16. Water (750 Ml) Steps: 1. Add all the first 11 items in a pan and heat it. 2. Finely Powder the heated ingredients using a Mixer Grinder ( A Powdering machine) [ The Country Drug Stores, now a days are providing you with the ready made powder) 3. Slowly Add the Mashed Jaggry to boiling water. Let the water turn thicker and get the brownish shade of the Jagery. 4. Add the powder and let it boil for 10 Min. 5. Add the Oil to the mixture. Let it Boil. Start stirring the contents in the Pan after 10 minutes, You can slowly see the colour becoming a deep black. Add the ghee and stir the mixture until the time when you will be having it as a paste. 6. Let it Cool. Store it and eat it. Note. This should be taken in minimal quantities only. This will make you feel Hungry. So people who are not feeling hunger can regularly take this. (The same thing with more Jaggery and lesser Oil is made as a medicine for pregnant woman) Happy Deepavali!

The dish that I feel best represents cooking in the U.S.A. is Cajun Gumbo. It blends several traditions, accommodates many influences, can be made with a myriad of ingredients (anything that crawls, swims, flys, or walks can be added), and is indigenous to the United States. French, African, Canadian, American Indian, and Spanish cuisines all lend a note to this true melting pot of a dish. Not to mention it's delicious.
