My grandmother is from Jamaica and my favorite dish she use to make was ox-tail with steam cabbage , rice and peas. She has past on and I have been on a mission to learn how to recreate my grandmothers dish. My family is no help at all . Any suggestions.

Right after breakfast you brown the ox tails good in the cast iron skillet using the drippings from breakfast. You coat the oxtails with seasoned flour of course before browning. Then you add a can of chicken broth to the skillet and bring all of this up to a rolling boil. Transfer the contents of this skillet to a crock pot on low for all day. When dinner time comes you can prepare the braised cabbage in that big skillet,with a little oil ,I wilt the cabbage real good and then pour a little liquid onto the cabbage,cover and turn down. The peas I cook in a separate pot with some hog jowls and a bit of seasoning. You may want to hook up some buttermilk cornbread to go with
this meal. Sometimes I add whole okra to the peas as well. Bon appetite

The oxtais should be browned in oil and then braised in beef stock for about 2 hours. Add the rice and peas 30 minutes before the end

CHOP YOUR VEGGIES FIRST
ONIONS, BELLPEPPERS (GREEN AND RED), GARLIC
SEASON YOUR MEAT
GARLIC POWDER
ONION POWDER
BLACK PEPPER
PAPRIKA
SEASONING SALT
BROWNING LIQUID

WARM SKILLET WITH ENOUGH OIL TO COAT THE BOTTOM OF THE PAN

ADD VEGGIES, 5 MINUTES OR SO LATER ADD THE MEAT...(SAVE THE JUICES FROM THE SEASONING)

AFTER BROWNING THE MEAT, YOU HAVE TWO OPTIONS
1) PUTTING THE MEAT IN A DUTCH OVEN PAN TO COOK SLOWLY IN THE OVEN AT ABOUT 350

2) LEAVING ON THE STOVE ON LOW TO COOK AND FOR BOTH METHODS YOU MUST KEEP MOIST BY ADDING THE REMAINING JUICE....

THAT SHOULD GET YOU STARTED I CAN'T TELL YOU MY FAMILIES SECRETS....THERE ARE MORE INGREDIENTS...BUT IF YOU USE THAT WITH YOUR FAMILIES SECRETS YOU CAN BE A LEGEND ON THE WAY IN YOUR FAMILY....GOOD LUCK...
