What should we serve after dinner with Spanish wines?
We are averaging 100 people. So we need to keep it simple
and small quanities.

You didn't say what you were serving for dinner with those Spanish wines, but I'll venture to bet that it wasn't KFC. Here are some thoughts:

1. Liquors such as kahlua, chambord, amaretto, etc. with ice and cream or coffee and cream.
2. Cream Sherry and Tawny Port
3. A late harvest Guervertstramiener (sp), well chilled
4. Limoncello on ice
5. Coffee

Which ever wines taste best for you is a good wine for a red wine that's not to dry try a red zinfandel or pinot noir from California and for a white wine try a riesling from Washington State.

The perfect after-dinner cordial is a fine aged port. Any really good quality madeiro port should be fine. Be careful though- port is syrupy sweet, so it may overwhelm your dessert if served at the same time.
