we are getting married in summer and want a menu of cold meats and salads. how can we jazz it up or present

at our wedding party we had Buddigs beef with cream cheese spread over it and rolled up with a green onion/chive sliver in it!
they looked really nice and hardly cost a thing.

salad with spinach leaves and presuto ham (SP) and dif color (orange, red, green) peppers diced and black olives... makes a pretty salad.
serve with vinegar and olive oil, salt and pepper

What a great idea!~ Here are some thoughts:

1. Cold baked glazed ham with a variety of mustards and artisan breads. Add a peach chutney and its great! Serve with miniature orange muffins and butter.
2. Roast beef, carved to order, with horseradish sauce and hot sweet mustard. Add a drizzle of cabernet cherry sauce and its a great combo on rolls!
3. Spinach salad with mandarin oranges, bacon, candied pecans and a balsamic vinagrette
4. Pasta salad with sundried tomatoes, artichoke hearts, olives, and Cheese Fantastico Dressing.
5. Shrimp salad on individual romaine leaves
6. Rice salad made with Rice-A-Roni, mayonaise, curry, sliced green olives and celery....decadent.
7. Cheeses are a must....include Spanish Manchenga, Cambozola, Irish Cheddar, and a nice Havarti....along with fresh artisan breads and assorted crackers.
8. Fresh fruit platters with pineapple spears, kiwi, star fruit, strawberries, raspberries, melon and a honey-yogurt sauce.

Have cold freshly cooked meats at hand, to be carved and served by the caterers or friends.
A leg of lamb and pork with an assortment of sauces and chutneys the guests can select for themselves.

the idea of jennyp is perfect.
order very nice breads.cheese with herbs,tomato with herbs,onion,garlic,baguette.
have different flavored mayos.garlic,herbs,thou island.
Dijon mustard.
different sliced cheeses.
my friend did that and had mats on the grass in stead of tables and chairs.some for the older guests.
big buckets-the metal kind,like for laundry old style.. with ice and wine bottles,water bottles etc.
for dessert she had different cakes.
have different baskets with nice big bows or decorations to hold napkins,silver wear,
