I need a few simple suggestions for vegetarian sandwiches and such at school. I already know cheese, and a couple others, but mostly sandwiches or other simple meals. I eat fish, but not too often...Thanks!!

There are many choices such as:

- Tofurky, which is deli slices of tofu (hence the name) in different flavors and would be great for making sandwiches. My favorite being Hickory Smoked.
- Boca Burgers make a great sandwich, you just have to microwave them and they already come individually wrapped which is great for school.
- Burritos, you can make them with beans, rice and cheese. Amy’s has some great choices.
- Make a salad with different veggies, shredded cheeses, and croutons.
- There’s always that classic, peanut butter and jelly sandwich. Oh, and if you’re allergic to peanuts, try soy butter which is just as good.

Also, you should go to stores that sell vegetarian meals. I know that Target, Fred Meyer, Nature’s Market, Albertson’s have vegetarian meals and foods. Look for brands such as Amy’s, Boca and MorningStar. And Good Luck!!!

Here are some simple vegetarian recipes that are great for lunch:

- veggie burger (with vegan mayo, cheese, lettuce and tomatoes)
- veggie ham sandwich (with vegan mayo, cucumbers, lettuce and cheese)
- veggie 'turkey' sub sandwich (with vegan mayo, cheese, jalapeno peppers, lettuce etc. on Italian bread)
- pesto (olive oil, garlic, pine nuts, basil) on linguine
- vegetarian spaghetti bolognese (sautee vegetarian ground beef with olive oil, garlic and a good spaghetti sauce)
