I think it's because less people buy them and so the companies are smaller. I used to get really annoyed at how expensive they were but then I thought of it in terms of supporting these smaller companies... if enough people buy from them then they'll become more popular and hopefully their products will become cheaper.
The cheapest veg sausages I've found are real-eat ones which I get from www.goodnessdirect.co.uk. You should buy other things too though to save on postage (they charge extra for a freezer box!) The real-eat sausages are frozen and you get 12 for £1.99. I would say they taste DAMN GOOD but no doubt 'someone' will misquote me and say I kill pigs for a living! Come on ash, you know you want to!

Meat sausages use a lot of cheap fats and fillers (in addition to meats being heavily subsidized by the U.S. government). If you look at the ingredients in veggie sausage, you'll probably find more ingredients you can pronounce and fewer chemicals, and scary fillers. Quality usually is not cheap.

Veggie food is not subsidised.
So, although its "expensive" compared to meat its all realtive. Its actually meat that is too cheap, rather than veggie food too dear.
The farming industry estimates meat should be £30 ( $60 ) / lb is we were really to have a free and unsubsidised market where animal husbandry was at an acceptible level.
Personally i think <£2 for 6 veggie sausages is fine.

They should be much cheaper, because the ingredients are much cheaper. Yet, the are so expensive because of the simple economic law of supply and demand. The demand is relatively high, since there are so many vegetarians nowadays, but the supply is (purposely kept) low, causing the price to be higher.

Well they are cheap to make because plants and spices are cheap. But most of this processed veggie crap can be sold to veggie heads at grossly inflated prices. Why? Because these airheads will pay for it. It is the truth. Especially "vegan approved" stuff is sooooo expensive.
Hey, if I was running a business and someone is willing to pay through the nose for crap in a bag with a "vegan approved" label, I'd sell it to them all day long.
