At my school's cafeteria they usually serve tofu, but it's crunchy on the outside and it seems like it has a "skin" like the skin that peels off of fried chicken. It's SO GOOD! Can anyone tell me what companies the university might buy from? Or maybe a recipe equivalent (that you have actually tried)? Thanks!

There's a few of ways to do it, I'm not sure the texture of the "skin" you are refering to.

Here are a few ways of making a "skin", I hope one of them is right:
Cut tofu into cubes
(use firm or "Asian soft, not silken, you will as it'll be too soft to handle)

a. Salt the cubes evenly (<1/2 a tsp each piece gives you a nice salty crust), deep fry.
(I deep fry using a 1/2 inch of oil in a deep pan and "deep fry" all the sides so I don't waste oil)

b. Coat in a beaten egg, deep fry & salt to taste

c. Salt & coat lightly in corn starch, deep fry.

d. Buy tofu skin, casing/sheets (it's normally used for sushi or soups & comes in sweet & savoury)

soak it in salted water till it's pilable.
salt tofu pieces & wrap the pieces in the skin. (if it's a case, mash, season & stuff.
deep fry or brush with oil & bake.

Ask them. I am sure if you ask nice they will give you the recipe, restaurants won't typically give their recipes out b/c they want you to come back (or they don't want you know the soup comes from a can). On the other hand the school cafe doesn't have that concern.

If they don't tell you it is probably because they think your being sarcastic. School cafes don't get questions like, "what is your secrete for making ______ so yummy" And when they do it is typically sarcasm. Most of the questions are of the form: "How can you screw up something as easy as ice tea?"

However if they buy premade, you will most likely need to buy it a hundred pounds or so at at time.

It sounds like they FRY the tofu. That is what gives it that crust/or skin you are talking about. You can get that in restaurants or even recipes online..just type in fried tofu..or crunchy tofu and see what comes up. Since its done in your cafeteria I am SURE they would be willing to give you the recipe...go up and ask them. The worst they can say is 'no' and I doubt they would say that.

It's fried-there are many different recipes but I think the idea to ask the cafeteria is good, since you like their version.
