Farfalle with Butternut Squash, Sage and Crispy Prosciutto (Farfalle con Zucca, Salvia e Prosciutto Croccante)
Ingredients:
1/4 cup extra virgin olive oil, divided
1 cup prosciutto di Parma, julienne
1 cup (3 medium) shallots, chopped
5 cups (2 pounds) butternut squash, diced
1 sprig sage
3 cups chicken broth
to taste salt
to taste freshly ground black pepper
1 box (16 ounces) farfalle pasta
1/4 cup Parmigiano cheese, grated
METHOD:
BRING a large pot of water to a boil.
HEAT 1 tablespoon olive oil in a small skillet. Add prosciutto and sauté until crispy. Set aside.
HEAT remaining olive oil in a large skillet. Add shallots and sage; sauté until translucent. Add butternut squash and sauté for 3-5 minutes.
ADD broth. Simmer until the squash is tender. Discard sage sprig.
PROCESS one third of the sauce in a blender until smooth. Combine with the remaining sauce mixture.
COOK pasta according to directions. Drain and toss pasta with sauce. Stir in the cheese.
TOP with crispy prosciutto and serve.

Hi I'm Italian and the one I can suggest you is Pasta All'arrabiata. is very easy,
take some spaghetti, (150/ gr each person)
tomato sauce,
garlic,
salt and an hot pepper (powder as well)
Put much (this is the secret fr a good Italian pasta) water in a pan let it boil and cook the
pasta but not too much (al dente!!!!)
In a pan put some oil of olive, one o two small garlic
let them get brown and take out, then poor the tomato souse and the hot pepper cook for 15 minutes. When the pasta is cooked put all together and leave on the gas for 1-2 minute, serve the pasta and Buon Appetito!!!! If you like is possible po add some cheese but I don't suggest it.

This is very very simple..and absolutly delicious!
prepare:
grate some parmesan cheese (about a cup grated cheese for pasta for 4) have some single cream at hand (about a cup for 4) set out plates since this should be served immediatly
Boil some spaghetti until al dente (it needs to have a bite to it), drain, turn of the heat. Return the pasta to the pot. add cream and cheese (the heat from the pasta and the pot will melt the cheese) and just stir for a few seconds and serve up.
You can, of course, add things like, diced ham/bacon, green peas, chopped herb etc just add it with the cheese and cream. Or why not serve it with a home baked ham on the side? or a grilled chicken breast?
Anyway I love this pasta

Tuna Pasta (Cold): 20 min 20 min prep 10-12 servings 1 (32 ounce) bag large elbow macaroni 6 (6 ounce) cans tuna 1 bunch celery 1 red onion 1 (16 ounce) bag frozen peas 1 1/2 lbs cheddar cheese 1 (10-12 ounce) jar sweet pickle relish mayonnaise (Light Mayo If Desired) salt & pepper 1. This recipe makes a lot. If you are feeding an army, great. If not, you can cut ingredients in half. 2. Boil macaroni according to directions. 3. While preparing macaroni, prepare other ingredients. 4. Slice celery, chop onion, slice the cheese into 1/2 inch cubes. 5. When macaroni is finished, place in BIG bowl. 6. Start off using about half of the macaroni and add more as desired. 7. Mix in the rest of the ingredients along with salt and pepper. 8. Now this recipe calls for a lot of mayo so you might want to use light mayo. I use a lot of relish because it makes it really sweet. The good thing about this recipe is that you can tweek it to make it taste the way you like. ENJOY!

Chop some fresh tomatoes -- about a cup. Crush a garlic clove in a press or mince it. Chop a scallion. Blot the oil from about a quarter-cup of sundried tomatoes in olive oil and cut them into thin ribbons. Mix it all together in a bowl with about 5 tablesoons of good olive oil, salt, pepper, and 2 tablespoons each of chopped fresh basil and parsley. Cook a half-pound of pasta -- rotini work well, but shells or other shapes work too -- until al dente. Drain the pasta and toss it with the sauce in the bowl. The pasta is all you have to cook.

This is great! Use linguine or other long pasta.
Saute garlic and a shallot in olive oil, add 4 plum tomatos, more if your cooking for friends, let them melt down to a rough pulp. Then stir in a pinch of cayenne pepper and half a torn mozzerella ball, large, when the cheese goes stringy pour it over the cooked linguine and add roughly torn basil, dont chop it as the metal of the knife oxidises the leaf and turns it black. It takes around 15 mins max!

buy some pasta...and however much...like for rotini or something I would do about 2 cups..or maybe 3.
take about 4-5 romaine tomatoes and chop them up
use about 1/4 cup olive oil
add in 2 TBSP. Garlic, 2 TBSP. Basil, and whatever other kind of Italian spices you like.
Chop up 1/2 cup of kalmata olives and toss those in there (this is optional)
Get yourself either some grated Parmesan cheese or some fresh mozzarella diced up into small cubes..
Toss all ingredients together and VOILA'..YUMMY!!
**Add salt and pepper to taste if you wish.

Pasta Bolognese
2 tablespoons butter
1/4 lb sliced bacon (cut 1/4 inch slices)
1 onion, chopped
1 lb ground beef
1 cup low sodium beef broth
1/2 cup dry white wine
2 tablespoons tomato paste
1/2 teaspoon oregano, dried
3/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup heavy cream
3/4 lb spaghetti
2 tablespoons chopped parsley
In large frying pan, heat butter and bacon over moderately low heat.
Cook until bacon renders some fat (approximately 3 minutes).
Add onion and stir approximately 3 minutes.
Stir in ground beef and cook until meat is no longer pink.
Add broth, wine, tomato paste, oregano, salt and pepper.
Simmer, stirring occasionally, until sauce thickens (25-30 minutes).
Stir in cream and remove from heat.
In the meantime -- cook pasta until almost done (12 minutes).
Drain and toss with sauce and parsley.
Enjoy!!!

I love spaghetti and meatballs with parmesan cheese. I don't use beef so ground turkey or pork sausage, would do the trick. I use tomato sauce to make it all rich. Then I add oregano, sage, cayenne pepper, green pepper, onion, garlic powder and seasoned salt (preferably Lawry's Seasoned Salt). I trust that you will enjoy this as well. Peace and God Bless.

Garlic prawns - Pasta/rice,green or cooked prawns,cream and garlic
1. Cook pasta/rice
2. Butterfly back of prawns - (removing up the back)
3. Place cream and garlic (to taste) in fry pan reduce slightly (wait until it thickens slightly), place in cooked or green prawns wait until cooked.
4. Dish up pasta onto plate, pour over garlic sauce and prawns.
5. ENJOY
