Thyme, tarragon, and parsley are all good on cooked carrots.
Try a little butter, some fresh minced ginger, and a touch of brown sugar.
My favorite is just butter, salt, & pepper.
Dip raw carrots in Ranch dressing for a different treat. (Try French fries in Ranch instead of ketchup. You'll never go back)

You can use a light honey mustard glaze (substitute brown sugar for the honey if you do not have any) or an orange glaze (orange juice with a dash of brown sugar). You want to make these glazes light flavored as carrots are naturally sweet.

I usually use brown sugar. . . .The other night I went to dinner, and the veggies were carrots and carmelized onions, which had a light balsamic vinegar glaze. They were so good! Frankly, the vinegar was a little much for me, and the combination of the two would have worked together fine on their own, but it gave them such a different flavor as I am used to sweeter.

If you like a "sweeter" carrot - brown sugar is excellent.
If you would like a "tart" carrot - a sprinkling of apple cider vinegar.
If you would like a "savory" carrot - (this one is a kicker) try using some sauteed onion with the carrot. Saute the onion in another skillet until brown then add to the carrots.
Now to really tear it up you can do two together. I bring the combination of the "sweet" and the "savory" to potlucks all the time. I saute onions until brown, mix with carrots cooked in brown sugar and butter/margarine. I then sprinkle with a bit of fresh parsley. Simple...yet very tasty!

My husband makes excellent carrots. They are delicious! He uses honey, pepper, butter or margarine and a salt substitute called Vegasol/Spike. He boils them, but not too long or they will get mushy. YUMMY!!!!

I love them roasted. Whenever I roast beef, chicken, or turkey I cut up carrots, onion, and celery and add about a quarter inch of broth to my roasting pan and let everything roast together.

melt some velveeta cheese for a creamy carrot ( if you got kids whatch em disappear ) for some spice add some finely chopped serrano-or-jalapeno pepper ! you'll love em and talk about simple !!!
