I would probably skip anything with eggs or mayonnaise unless you will have a cool place to store it... food poisoning is never pleasant regardless of tradition.
At this late date, keep it simple. Core and cut several apples (Granny Smith and either Pink Lady or Cameo work well) into sections. Soak the sections in pineapple juice in the refrigerator for at least 10 minutes to avoid having the fruit turn brown and mushy. Drain the pineapple juice, arrange the apples on a large plate around bowls of purchased caramel dip and cream cheese fruit dip. It's easy, looks nice, and most people will eat apples.

Deviled eggs are sooo good, but require a bit of work. Or you could buy a bunch of cheese cubes and some ranch dressing and I bet those would be popular. You could get a variety like pepper jack, or different cheddars. Lots of people love cheese. Don't forget the tooth picks! Another idea is seafood salad made with imitation crab etc. There are recipes on the back usually i think. Or hot dog buns+ string cheese+deli meat+condiments.

A tray of cream cheese stuffed jalapenos. Buy large can of whole pickled jalapenos...slice lengthwise and scrape out the seeds. Fill with cream cheese. Cream cheese stuffed celery is also yummy.
Really festive idea is a watermelon "boat". Cut lengthwise and scoop out the melon....set aside. Rinse out the "boat" and fill with cut watermelon, cut cantaloupe, pineapple, grapes, maraschino cherries...even chopped nuts (pecans, walnuts, almonds) are a nice addition.
Have fun!

Rolls.
Take a slice of sandwich bread and spread it with butter or margarine.
With a corner of a square or rectangle of bread pointing toward you, place across bread corner to corner the filling and roll up.
Fillings to consider:
Shredded chicken with some S & P or mayo
Asparagus spears
Surimi, a few slim slices of lettuce and a seafood dressing.
Present with the open ends upper most so people will see the filling they want

How about a Taco or Potato salad? Or, if you want finger foods, try deviled eggs [easy to make], a three-bean, dip appetizer, or minature pizzas on English muffins.

This is a great orderve. No cooking involved in this preperation.
This is what you will need: Hard Salami slices, cream cheese, green olive and toothpicks.
Get the hard salami slices, spread cream cheese spread on the salami. Roll up the salami place green olive and toothpick on the salami roll to secure it shut.

Well, it would help if we knew what is being brought by everyone else. Bring sodas, beer, or wine. Bring a Vegetable platter with a good dip.
