Here's an idea, hope you like it;
(it's very cheap to & easy to do)
Make a tray of veggies in a casserole dish. (enough for a few lunches). So you don't get bored with it, you can make like 3 different flavours or so.
If you haven't got time, make 1 simple plain veggie stock + garlic + onions flavour.
Slice 3-5 different veggies into rounds/chunks (eg, tomatoes, eggplant, courgettes, broccoli, spinach, mushrooms almost anything..)
Make your sauce, (eg. garlic onion + veggie stock, tomato herb, garlic butter, cheese & onion), thickened into gravy consistency. Simply, throw a few herbs, spices & stock into a pan & simmer till it reduces.
Salt it to taste.
Spread the casserol dish with the 1/2 the sauce (in different sections, if you make more than 1). Layer the veggies alternately over the sauce, spread the next 1/2 and continue layering. Spoon a little stock/water over the veggies to keep it moist, sprinkle salt.
Cover the entire dish with foil & chuck it in the oven for 1 hour at 200C. Watch TV or surf the net... In 1 hour check that the veggies are cooked by poking the hardest with a fork. Leave it to cool then stick the dish into the fridge.
That's your sandwich filling for a week or so.
You can add butter, cheese, ketchup or mayo to your sandwich if you feel like it. :-)

Are you vegan or just vegitarian. If you are just vegitarian, there are tons of sandwiches!! Cream cheese and black olives. Mozzerrella, basil, and Tomato; Hummus and Roasted red peppers; Banana and Nutella sandwiches.
Make salads with sunflower seeds(shelled of course) bits of Cheese, pickled beets, carrots, broccoli, olives, and add your favorite dressing in a small container on the side so it doesnt get soggy!
Make a cold sampler--- Different vegis with dip, fruit cut up bite size, cottage cheese or yogurt, and hummus and bagel chips... Yummy!

You can take veggie burgers, 'chicken' sandwitches, and other 'meat' sandwitches.
You can also eat grilled cheese.

You could have things like pasta, pizza or fruit in your lunch.
Maybe salads?
In sandwitches you could have cheese.
Im not vegetarian, but I find lettuce, cheese, tomato and mayo taste really good together (if you like those of course.)

Well, im in high school too and the only vegetarian at home, i suggest you try cucumber sandwiches. mix mayo with italian dressing and leave it overnight, put it on rye bread. It taste great!

welp, a bulk of fresh fruits and vegetables.
marinated cheeses on artisan bread (get this at your local farmers market or whole foods), water, a chilled freshly juiced carrot juice or apple/orange juice, nut granola bars (can make these with honey, almonds & other nuts, cinnamon, vanilla, sprinkle of salt)
vegetarian soups, like french onion soup - my fave
(carmelized onions, thyme, salt, white wine/and or sherry, oregano, parsley, vege broth [carrots, onions, celery, parsnip, turnip] and gruyere/swiss/marscapone cheese]
or a creamy cheese fondue (add more cream so it stays a cheese dip and add wine) with vegetables
mushroom soup with barley and leeks and potatoes (add these ingredients into a vege broth, potatoes and barley first with some thyme, oregano and rosemary as herbs)
bean soups
vegetable soups
fresh fruit jams and nut butters (almond butter, hazelnut butter, pistachio butter etc)
tons of things you can do

well you should make a tofu blt take some tofu cook it put vegitables oh it it very yummy^_^ im not a vegitargarian but i love tofu much better then nastry meat
