We eat meat substitutes just to make our life a bit easier. Newer vegetarians tend to get meat cravings, and these meat substitutes make the transition very easy for them. I personally detest meat substitutes. It reminds me too much of eating actual meat, which makes me lose my appetite completely. At least I don't get cravings.
So, basically...either vegetarians use these faux-meats because they like the taste of meat but without the cruelty.
Also, many times it's just easier to put these meat substitutes in place for meat in dishes, instead of having to find a whole new recipe.
Meat substitutes are also fast and easy ways to get extra protein too.
And the second poster "Jean" is an idiot.
I hate it when meat-eaters use God as an example. Not everyone believes in a supreme-being, much less the God he/she is referring to. And even if they did why must they base their life on a person who lived thousands of years ago...when eating meat really was a necessity to live. We have more resource and knowledge, and a vegetarian diet is actually HEALTHIER than an omnivorous one. Also, we shouldn't base our lives off another person like that--even if it is "god". It's not against the commandments to abstain from eating meat. In fact, if there was a God, I'd think he'd be happy that the vegetarians and vegans refrain from killing innocent animals.
Sure, there's a lot of cows. Golly, it a good thing we're not using artificial insemination to exploit the animals and then use their offspring for our own selfish purposes or exploit them as well.
Our world is so screwed up.

I have answered this before somewhere, but here goes.
Vegetarianism = Not Eating Meat
Quorn = Not Meat
MOST vegetarians eat meat because they dont like the millions of cattle being hung upside down with their throats slit, slowly dying (thats just one example), each year, and so choose against it.
Quorn gives the texture of meat without it, so people can still enjoy the flavours and textures, and still get all the protein etc. of meat, without any animal involvement.
Some people are against eating quorn however, because it is manufactured to be like a 'forbidden' product, and you need meat to make it taste like it etc.
Heres an example.
You are alergic to a certain ingredient in Asdas Cornflakes, so you buy Kellogs Cornflakes, the Kellogs doesnt have the certain ingredient in it, but still has generally the same amount of calories, calcium, protein etc.

The eating of a fake meat is much different that eating actual meat. No animal has to die in order for a boca burger/quorn to be produced. I am against the cruelty behind the production of the meat and the health concerns regarding the consumption of meat.
Since faux meat is healther( in cholesterol, saturated fat, etc) and there is no cruelty involved, than the consumption of the product is no different that eating any other vegetarian food.
I myself, liken it to a person who is watching cholesterol who switches from regular bacon to turkey bacon. Should the person avoid turkey bacon because regular bacon is high in cholesterol... no, because what they are looking for is something healthier, just the same as vegetarians are looking for a cruelty free and healthier alternative so they choose fake meats

Like many people, I was raised eating meat. My body can no longer tolerate meat, and I also became disgusted with the meat industry the more I read. So I went vegetarian, then vegan. But like many veg*ans, I still remember when I enjoyed the taste (which is really the seasonings it's cooked with) and the texture, but I prefer to eat plant-based analogues so nobody gets hurt for me to eat.

Because most of us were meat eaters once and cooking with meat is what we know; a meat substitute makes the transition easier. Because we like variety in our diet as much as the next guy. Because some of us liked the taste and texture of meat but couldn't deal with the thought of killing animals and meat analogs solve that problem. Because sometimes it's nice to fit in and have a "burger" when everyone else is having a burger. Because many of them are made with soy or other good sources of vegetarian protein. Because they are convenient in a pinch. Lots of reasons (and some veggies have just as many reasons why they don't eat 'em.)

Most do because it replicates the tastes they grew up with, but no creature has to die in order to satisfy that taste. I find the mock meats gross-especially quorn, which is a bacterial fungus grown in huge vats-its marketed to make people believe its a form of mushroom, but its a man made chemical item-not really a food at all. I prefer fresh, organic, whole foods, personally

if you had told me 6 months ago that i would be a vegan, i would've laughed and denied it. there was simply no way i could give up chicken and cheese.
then i learned about the impact factory farming has on the environment, the suffering of the animals in these farms, and the major health risks associated with eating these products. did i really want to keep on eating meat when i learned all that info?
eating fake meats and animal products allows me to continue enjoying all my once-favorite meals without all the hazardous effects. i can spare a chicken's life and eat soy chicken instead. i can eat seitan without having a cow's throat slit. i can eat soy or rice cream and know that my body will not be suffering from the extra fat and cholesterol. i can eat healthier, earth-based foods such as grains, fruits, and veggies and take less from the earth, since we're using up our resources quickly.
and that is why i choose to occasionally eat foods that resemble meat.

I know, personally, I prefer not to eat meat for ethical reasons, but that doesn't mean I don't like the taste.
Some people eat the meat substitute products for the protein and other nutrients.

Just because we're vegetarian doesn't mean that we didn't enjoy food like meat, it just means that we chose not to eat it for whatever reason. Fake meats are a cruelty-free way to still have these foods in our diet.
And not all vegetarians do eat them.
