Easy, make your best meat dish.
Omit the meat & animal by-products.
Subsitute the meat with beans, potatoes, tofu, vegetarian dumplings or seitan.
Use vegetarian stocks & sauces to flavour. Substitute msg for sugar+salt.
Use olive oil instead of butter/animal fat.
Use starch to thicken & bind instead of eggs.
Use agar instead of gelatin.
It'll taste great & they'll be impressed. It's incredibly easy to turn a meat dish into a vegan one.

BEAN LAYER PIE
6oz black eyed beans
1 large onion chopped
2 tablespoons olive oil
3 medium tomatoes skinned
2 sticks of celery sliced 1 small pepper chopped
1 tblspoon crushed parsley
1 teaspoon mixed herbs
method
1 cook beans in the double thequantity of water for 30 mins
2 fry chopped onion in oil till soft then add tomatoes celery and pepper cook for five mins
3 places layers of beans and veg in an ovenproof dish add seasoning and herbs
4 cover with mash potatoe and bake in the oven for thirty mins 325f gas mark 4
5 serve with crisp green veg such as cabbage or curly sea kale

Pasta is always good, but do check the labels. Amy's (www.amys.com) is an all-vegetarian company and has many vegan options. She has a line of pasta sauces. And check the label of the pasta you get to make sure it doesn't have egg!
Tofurkey (www.tofurkey.com) makes a line of sausages you can grill or pan-fry to serve with the pasta.
Make a vegan casserole and make that to serve with rice.
You can make tempeh cutlets. Just marinate them in sauce and grill. Tempeh is a fermented soybean cake. It has a nutty, chewy texture. Serve with potatoes or a rice pilaf and veggies.

Well, I'm not so good on recipies, but I'll give it a go...
Vegetarian chili (I'm pretty sure it's vegan friendly-just don't add cheese!)

you will need:
*tomato sauce (about 1/2 a can for every person)
*kidney beans [canned] (about 1/2 a can for every person)
*ground 'beef' (you can find this in the vegetarian section in your grocery store most likely. I used Boca, but I'm sure Morning Star has some too. I'm not quite sure of the measurements, but I'm sure you can figure it out.)
*chili sauce
*corn [opt] (about 1/4-1/2 a can per person)
*any other veggies you'd like to put in

Directions:
I'll tell you how I cooked mine. It's probably not the BESTway, but you will probably be able to find a better way to cook yours.
See, our oven isn't working at the moment, so I have to use the microwave for everything.
What I did, was I got the tomato sauce and put it in a microwavable container. Then I drained the kidney beans and mixed them in. Then I warmed them up in the microwave.
When they were warmed up, I took them out and warmed up the groud 'beef'. All you have to do is follow the directions on the package you buy.
When everything was warmed up, I mixed the 'beef' in with the tomato sauce/ bean mixture. I then warmed them up a bit more.
When it was all done, I mixed some chili sauce in too.
Also, if you want, you can put corn and other veggies in.

You will probably want to use the stove to cook everything, but unfortunly, I really am not sure how to do so. I'm sure you'll figure something out, though.

I just had a dinner party for a bunch of my omnivorous friends and it was a total hit. Although I am vegan, my fiance is a lacto-ovo vegetarian, so there is usually real cheese (from a local susutainable farm) around the house, and it was used on everyone's dinner but mine. It's easy to leave off, though.
