Hi we are switching to a vegetarian diet. I have been cooking vegetarian dinners for a few months now. Well my husband decided that he doesn't want deli meats for his lunch anymore. He wants to do vegetarian lunches. The only thing is he is on the road all day for his job and needs somethind easy to eat while driving. Does anybody have any ideas. Thank you to everybody that answers.

Grilled portobello and swiss sandwich.

Marinate a porto cap in garlic, olive oil & Montreal steak seasoning for at least an hour or two - overnight is better.

Saute or grill it until it is soft, like a steak.

Melt a slice of Swiss on top and put it on an onion roll.

You can eat this hot or cold, and top it like a burger if you choose... I like mine plain or with a little steak sauce.

I'm sorry there aren't any measurments, I cook by feel.

You can remove the gills under the cap before marinating so that it doesn't cook up "inky." You also want to make sure you are using a large cap that is about the size of the bun.

Panera Bread makes a veggie sandwich that I love!

It is on a tomato basil bread, but you can experiment with different bread...

It has a cilantro hummus spread, lettuce, tomato, onion, peppadew peppers, cucumber, feta, salt & pepper.

Lots of users gave some really great ideas. So rather than repeat what's already been said. Here are some fun, offbeat portable vegetarian lunches.

Morning Star makes a vegetarian corndog that is actually a dead ringer for the real thing.

A Boca Burger cut into strips inside a tomato wrap with shredded lettuce, jack cheese, diced tomato, diced onion, with a little spicy mustard or garlic mayo is pretty tasty.

Simple Peanut Butter and Jelly on a whole grain wrap is great too. (Use crunchy peanut butter for a little excitement.)

Slices of fresh Mozzarella are a nice replacement for meat in any sandwich. They taste especially good on foccacia bread.

add veggie chips, lowfat potato chips, or carrot and celery sticks, and a refreshing drink like iced green tea and you've got quite the fun veggie lunch

A few ideas that should be as easy to eat on the go as his old sandwiches:
1) Tomato, Basil, Avocado, and Mozzarella (cheese optional) sandwiches. Just add a little vegan mayo and mustard, salt and pepper, and you're good to go. Best on toasted wheat bread.
2) Tortilla wraps are great for just about anything. You can stir fry up some tofu with a peanut sauce, sprouts and veggies and wrap it up. I also like using the fake beef recipe crumbles from Morning Star, a cheap packet of taco seasoning, and some peppers and onions to make a fajita lunch on the go.
3) He can still go with the deli meat; they make lots of fake chicken and ham slices, although I've never personally tried those (Usally can be found in the produce section of your grocer...where they also have veggie spinach bites and other items he could eat easily while driving).
4) Fake Italian Sausage croissants. I'd pick up a case of the Pilsbury mini croissants (the kind that you just open and bake, but wrap up pieces of fake italian sausage (Boca makes these and they're really amazing) and cheddar or soy cheese (optional) before rolling up and baking. Ends up being a finger food equivalent of pigs in a blanket.
5) If you have a thermos, you could make a number of soups for him to enjoy on the road (just be sure you use vegetable bullion cubes instead of the beef ones). I'm a fan of any soup or stew with butter beans, carrots, and lots of onions; always turns out well. But, if it needs to be something easily drinkable, a cream of pea soup or a gazpacho is always really nice and easy to make. And, most of the store-bought cream of tomato soups are veggie (be sure to check) and are pretty edible with a little extra garlic powder and chives thrown in :)

Oh, and I know some of you are far healthier than I am (I just love my fake meats and cheeses...heh), but remember that grapes, cherry tomatoes, and dried cranberries are all very easy to pack and eat on the road. So, I'd include some of these as well/

There r 1000's of recipes for vegetarians! I come from Indian and we r basically vegetarians and cook all different kind... but the problem is what u can adopt and make it quick! I normally fix one vegetable and wrap with tortillas with lettuce and if required cheese! I make veggie sandwich jst like sub way! u need to buy those bread in super market and the ingredients to go with it.... like olives, pickles and cheese and veggies like cucumbers , tomatoes, etc.... itz easy n can be kept out with out any refrigeration but if hez on the move u need to keep in lunch box with ice packs... chips if needed to go with it..... there r other recipes.... like make stir fry veggies, fix white rice and mix n wrap in tortillas or pita to go! plenty more! The best lunch is a tortilla wrap w/ the garden flavor cream cheese spread on it. Add lettuce, tomato, green onions, avocado (and any other favorite veggie-I like alfafa sprouts)...wrap and eat. If you have access to a microwave the boca grilled veggie burgers are great.

some good sandwich fillings:

avocado, roasted peppers, roasted eggplant, roasted portabella mushrooms, egg salad, hummous, refried bean, assorted cheeses, any of these combined with onion, lettuce, tomato, etc.... make great sandwiches. I have a friend who makes a dip that is fabulous in a wrap too....it's black beans, corn, avocado, tomato, green onion all mixed up, then wrapped in a tortilla. Tortillas are good with wet ingredients too, as bread tends to turn to mush even if you use good whole grain bread.

-Rinse a can of chickpeas. Mash them up with a fork, or whiz them in a food proccessor. Add some chopped green olives, mayo(or nayonaisse) hot sauce and pepper. Really good in a pita or a wrap.
-buffalo chick'n nugget sandwich--morningstar chick'n patty, hot sauce and blue cheese dressing on a kaiser roll.
-hummus and cucumbers in a pita

nut butters(almond,peanut or cashew)sandwiches with or w/o jelly or any other topping.(sometimes i even throw on a couple pcs of chocolate) /nut butters pretty well bind everything between the bread(except lots of jelly!) / lots of better suggestions but just don't forget pb&j
