If it were me, I'd make enough potato salad to feed half the crowd 1 cup each. In my experience, no one brings enough of something to feed every single person to a pot luck. It would be a different story if you were hosting the party, of course : )

So make 12 cups/a large bowl, and that should be plenty.

Taking into account that not everyone eats potato salad... being Labour Day pot luck, their will probably be HEAPS of food and too many left overs... Work it out by how many potatos each person would need for a serving.... Probably one or one and a half medium sized potatos each... 24-36...

Recipes are different. I have a scale on how how many servings to how many pounds of potato's. It always seems to work well.

If your recipe calls for 5 pounds of potato's, expect about 12 servings. Or for every 1 pound expect about 2 and a half servings.

I would suggest ten pounds by scale, but normally at a party and such making a large bowl will due since there are so many other foods as well not every one will eat it, that's what I would do!

Plan on between 1/2 and 3/4 cups per person. Some folks love potatoe salad and will eat more than a cup or two, and others won't touch it!

figure at least 1/2 cup per person but not everyone likes potato salad so only make enough to feed half that many people

4 oz apiece. x 24 = 96, 96 / 16 = 6 lb

I would say about 4 oz per person so, like 96 oz or 6 lbs.
Maybe a little less cause not everybody eats it.
