I'm making the transition to Veganism myself, and I have a few great tips for you!
Some of the very best, easy dishes within the Vegetarian diet would be: Fried Tofu, Chocolate Mousse (there IS a vegan recipe!), hummus (my absolute favorite), and much more! Try "Tofutti" brand products.
One of my personal favorite recipes is Fried Tortillas.
Ingredients:
~4 Soft Corn Tortillas
~Cinnamon and Sugar
~Canola Oil (enough to cover bottom of frying pan in 1/2 inch of liquid)
Put the Canola Oil in the pan and heat on a Medium-High setting.
Once oil is hot, drop tortilla in oil (one at a time). Let cook 2 min. on first side, then flip and cook for 1 1/2 min. Take out of oil and rest on plate covered with paper towels.
Sprinkle Cinnamon and Sugar mixture while still hot, let cool, and Bon Appetite!

I absolutely love hummus for a snack....it's quick & easy...it's great w/cucumber, carrots, grapes, topped on rice cakes, salads...so many options...if you're looking for veggie websites, google it - there's tons of them:-)!! Oh, and black bean dips are fantastic too...
