Pasta with a chunky garden sauce
Veggie stir fry over brown rice
Grilled portabella mushroom burgers

just to name a few of the thousands of vegetarian dishes that can be found online. Most dont have lettuce in them either.

Most vegetarians like
Veggy Burgers Boca & Morningstar can be found in most supermarkets. ( make sure they say vegan cause some have cheese or egg whites; your friend may not eat those)

Most pasta dishes can be made vegitarian just get sauce without meat in it's ingrediants. ( again watch out for cheese)
BTW Lasagna is great with blended tofu in place of ricatta

Make breakfast burritos w Firm tofu, onion, cilantro, bell pepper and picante sauce.

Peanut butter and Jelly

Soy milk and almost any kind of Cearal or oatmeal

I like to shake things up at the local pizzarea & order a pizza with lots of vegis and no cheese

Enjoy!

Lightlife (www.lightlife.com) also has a good selection of vegetarian items.

Yves (www.yvesveggie.com) has vegetarian and vegan items. They have a really good taco mix that just needs a quick spin around a skillet to warm it up--then you can make delicious tacos.

You can use veggie crumbles in pasta sauce, chili, or a goulash. I like to make chili with tempeh (an Indonesian food made from fermented soy--it comes in cakes and has a nutty, chewy texture); you just use it instead of meat. You can make hearty veggie stews with seitan (wheat gluten).

It's pretty easy to cook for a vegetarian--just don't use animal flesh, gelatin, or cheese with rennet. Oh, yes, and that includes beef or chicken stocks.

the only thing vegetarians cant eat is: fish, poultry, red meat and things with gelatin or animal rennet in it. so other than marshmallows and some cheeses, she eats the same things as you do. make vegetarian tacos one night with spanish rice, beans, guacamole, salsa, olives, onion and what ever else you like to put on your tacos.
if you wanted to get her a frozen meal or something, there is a brand called amy's that has a lot of good frozen foods to choose from.

make tofu dishes. onething i enjoyid pad thai

most pad thai has fush sauce in it. just add soy sauce in stead of the fish sauce. but if the soy sauce is all ready in the recipe just get rid of the fish sauce and add a little water instead.

the first recipe has shrimp but just add some veggies instead.

some good veggies r: carrot strips, sweet green, red, yellow, and orange bell pepper, mushrooms, pea pods, just get fun with it

if u need real help just ask her. ask her wat kind of dishes she likes. there r lots of vegan currys out there to. go to www.foodnetwork.com and u can just search recipes. have a great day

Boca has frozen crumbled veggie burgers, like shredded beef, that you can use for tacos, spaghetti, and lasagna.

VegCooking.com has a ton of recipies that you can easily make, too.
