Agreed, when it comes to scallops --- I am a purist. Just a little s&p and seared in a little oil or butter. A squeeze of fresh lemon and that's it.

There is a great recipe for Scallops called Coquille Saint Jaques. (which Im more than sure is spelled wrong)
It is similar to an Alfredo, I wish I could give you a recipe but I just measure everything in my head.
Basically, find a recipe for Alfredo sauce, add a nice handful of mushrooms to it, some sherry wine, parmesan cheese and about 1-2 lbs of scallops.
As for scallops by them selves, try wrapping them in Arugula and Prosciutto instead of plain old bacon. Shrimp are very good like this too.

There are lot of good spices for scallops, depend which way you want to cook it. Basically, the scallops you get from market come in two form, shell on or without shell (fresh meat).There are lot of ways to cook scallops but my own favourite for the shell on scallops is to steam it, a very traditional chinese style. For steam method, you can taste the original freshness and sweetness of this seafood, Method and spices use is simple-
1. 10 scallops with one shell on,
2. bit of gound black pepper,
3. 20 g of chopped gralic,
4. 20 g of chopped chili (quantity base on how spicy you like),
5. 1 tea spoon of soy sauces,
6. 2 tea spoon of chinese cooking wine.
Place the 10 scallops on plate (shell on base and meat on top). Put all ingredient on top of it and ready to steam over hot water. Cook or steam it with work or steamer for 8 mins and ready t serve hot.
Another simple method for fresh scallops without shell. This is very simple -
1. 300 g of fresh scallops meat,
2. half tea spoon of salt,
3. bit of gound black pepper,
4. butter for cooking.
Place some butter in hot frying pan. Put in the scallops and pan fried the both side of scallop meat till cooked ( about 4 to 5 mins). Add a little salt and black pepper to taste. Ready to serve hot.
Try not to use strong spicies for scallop as it will cover the original taste and freshness of the scallops. Beware that scallop need little cooking time to maintain it own favour, do not over cook it.

Scallions are good. Other flavorings: chives, parsley, red onion or shallots, minced garlic, white wine, pepper, lemon juice, lemon rind, red pepper flakes.
So if you have scallions, saute them w/ the scallops in a bit of butter & olive oil. I'd recommend lemon juice/rind or de-glazing the pan w/ a bit of white wine. Finish w/ salt & pepper to taste.

Fennel for an aniseed flavour.
Celery salt.
Scallions would be very nice.
You wouldn't want too much otherwise it will overpower the delicate taste of the scallops.

Scallops Scampi
Ingredients:
1 lbs. sea scallops
½ cup butter
1 tbs. chopped garlic
1 tsp. fresh lemon juice
¼ clam juice
¼ cup heavy cream
salt and black pepper to taste
2 tbs. fresh chopped parsley
1 lbs. cooked pasta
Method:
In a medium sauté pan over a low fire melt the ¼ cup of butter and sauté the garlic and the scallops until the scallops are firm to touch and lose their translucent appearance. Add the lemon juice, the chopped parsley, and the clam juice and return to a simmer. Add the heavy cream and return to a simmer. Reduce heat, add the remaining butter and check the seasoning for salt and pepper. Simmer until the butter melts and the sauce thickens. Serve at once over your favorite pasta. Garnish with chopped parsley and a lemon wedge.

Scallops and Spinach over Pasta
INGREDIENTS:
12 ounces spaghetti
3 pounds bay scallops, raw
1 (10 ounce) package frozen chopped spinach, thawed
1 tablespoon fresh lemon juice
1 tablespoon olive oil
1/4 cup water
garlic powder to taste
salt and pepper to taste
1/4 cup grated Parmesan cheese
DIRECTIONS:
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
In a medium skillet, saute spinach in olive oil until heated through. Add lemon juice, garlic powder and water.
Add scallops and cook for 3 minutes or until done. Be careful not to overcook. Season with salt and pepper to taste.
Place strained spaghetti in dish and place the scallops and sauce on top. Serve with grated Parmesan cheese.
