Can Quinoa be eaten raw?

Are we able to digest raw Quinoa, and get all of its nutrients?

You can sprout quinoa, then eat it raw. Quinoa is coated with a bitter compound known as saponin, but rinsing before using will remove it (most commercial quinoa is pre rinsed. To sprout, rinse the quinoa, then place it on a wet paper towel in a mason jar. Cover the jar with a piece of cloth or a cutoff pantyhose, then rinse and turn it several times a day, discarding the rinse water. It will sprout in about 3 days. Quinoa flakes make a GREAT hot cereal, and the flour and flakes are great for baking muffins and quick breads. I am allergic to wheat, so I rely heavily on quinoa as a staple food. I am at this moment making a quinoa tabboleh salad with the inca red variety.

As I am allergic to wheat, I know a lot about this area. The grain Quinoa (pronounced keen-wa) can be eaten almost raw. You can't just eat it without any preparation, but you can boil it and eat that.

In fact, quinoa has a notably short germination period: only 2-4 hours resting in a glass of clean water is enough to make it sprout and release gases, as opposed to, eg., 12 hours overnight with wheat. This process, besides its nutritional enhancements, softens the grains, making them suitable to be added to salads and other cold foods.

I'm not really sure seeing that I'm not Peruvian but you can try. I believe the Peruvians would consume it in a soup with Potatotes and corn like Succotash in Virginia
