First of all..Mmm...PIg Roast. Sorry, But I would probably have potato salad, ranch style beans, spanish style rice, corn on the cob, mixed vegetables, chips and dip, or chips and salsa. potato rolls, butter, corn or flour tortillas, baked potatoes, scalloped potatoes, macaroni salad. You name it, there are lots to choose from.

Baked beans! Rolls for the meat...some people like to make a sandwich b/c a well roasted pig has great, juicy, fall-apart meat that works well on a sandwich.
You need some great sauce too. Frankly, everything goes well with a good, old fashioned, roasted pig.

Is this a Chinese Style roast pig, A Louisiana style roast pig (Cochon de lait) or a southern hog?
For a Chinese style roast, do chow mein, fried rice and stir fried veggies.
For a Louisiana roast, do gravy, potatoes, okra and tomatoes and bread...
For a Southern Hog, treat it like a bbq - potato salad, mac salad... mac and cheese, baked beans... etc

An apple salad. I was going to suggest sauteed apples, but you're not going to be able cook on the spot. But apples are a classic pairing with pork. And I second the idea of sweet potatoes, because they also complement pork. You could wrap them in foil and cook them at the roast.

Corn on the cob, potato salad, baked beans. Oh, and have a lot of sour cream and horseradish for people to add to the pork. It's freaking awesome!!! Have fun!

Steam a big tub of corn on the cob, right in the husks. Provide lots of butter & salt.
A big crockpot full of baked beans (make the ranch-style mixed ones, that have burger in them).
A big bowl of fresh fruit--cut up melon pieces, red & green grapes, strawberries, and chunks of fresh pineapple.

Cole slaw with a lot of vinegar in it. It is a good temperature contrast and cuts the greasiness in your mouth from the pig.
