Orange Rum Sweet Potatoes
Ingredients:
1 large can sweet potatoes, drained
1/4 cup butter
2 tablespoons rum
1/4 teaspoon salt 1/3 cup light brown sugar
Method
Cut potatoes in thick slices and layer in shallow baking dish. Combine butter, rum, salt and brown sugar. Bring to a boil and simmer 5 minutes or until thick. Pour over sweet potatoes and sprinkle with additional brown sugar. Bake 15 minutes.
Linguini Stir Fry
Try this dish the traditional way, served on a plate, or get a little creative and try some rolled up in a lettuce leaf.
Ingredients:
1 (6oz or 8oz) box of linguini
1/2 cup of vegetable oil
1/2 cup sugar
1/2 cup soy sauce
1/2 tsp salt
1/2 tsp ground black pepper
2 cloves garlic (minced)
1 small yellow onion (chopped)
1/4 cup cilantro (chopped)
3 stalks of green onions (thinly sliced)
OPTIONALS:
Meat - thinly sliced pork, chicken, beef or any seafood
Vegetables - carrots, celery, pea pods, green beans, etc.
Chopped peanuts
Method
Cook the linguini, drain and set aside. In a frying pan and on low heat, brown the sugar in the oil. When sugar is brown, turn heat to medium, add the chopped onions; cook onions for about 1 minute and then add garlic for another 20-30 seconds. Add the soy sauce, salt, black pepper and ketchup and cook on high heat. Stir occasionally and let it simmer for about 2-4 minutes (if cooking with meat and vegetables, add the meat at this time; depending on the meat, let it cook thoroughly, then add vegetables and cook for another 2 minutes or less, depending on how well you like your vegetables done). Stir in the linguini, coating it thoroughly; cook for another 4-5 minutes stirring occasionally. Dish it up on a platter, sprinkle with cilantro and green onions (add chopped peanuts if desired) and serve.

Try what I did tonight:
Made a white sauce to which I added some steamed, cut up sorrel leaves and some crumbled cheese (mature cheddar with good flavour). I poured this over some very quickly steamed chunks of coley and served this with ratatouille( mix of courgettes, onions, garlic and tomatoes + basil) and new potatoes and carrots. Most of the meal I grew on my allotment. It was really yummy, and we shared it with our elderly neighbour who enjoyed it too..

Saute shrimp in olive oil and garlic.
Serve with steamed asparugus 2-3 minutes should do.
Also you can saute some red skin potatoes with onions and garlic in butter or olive oil.
Serve with your favorite white wine.
For dessert fresh strawberries with a little sugar.

Make your self a meat lovers pizza. With savory steak, juicy sausage, perfectly cooked hamburger, and some crunchy bacon. And eat some spam on the side, its not meat anyway, but it sure brings about a mouth orgasm.

Rice noodles with stir fry vegetables. Try and eat it with some Talapia. YUMMY! I'm not a vegan, or whatever... but that sounds good.

go to sobeys and you can buy a few staeks of salmon, which you can BBQ with butter an other spices. have a side of salad, and uncle bens rice. excellent.
