Part of Thai cooking is to combine flavors such as sweet, sour, salty, spicy. So some of the ingredients are tamarind, fish sauce, lemon grass and chili peppers. There are many more.
I agree, this is one of the world's best cuisines.

Tamarind, Lemongrass, Chile,Patis(fish sauce), Basil,Cilantro, and honey.......all i can think of off the top of my head, but #1 was right- most asian Island cuisine all follow sweet, sour & spicy all in one dish or vary to an extent.
