Carrots are one of the best foods to eat, since they are high in water-soluble fiber. Soluble fibers are good because it takes them longer to empty from the stomach, therefore entering the blood stream much more slowly. All fruits and vegetables are good food choices when you have diabetes.

spinach(especially fresh) is a wonderful food. it is low in calories and will not raise blood sugar quickly or much at all. carrots are also very good for you, but are a bit high on the glycemic index. both are infinitely better than most other foods. raw, natural foods are the best!

Your mom can eat lots of spinach and carrots because they do not turn into sugar. They are vegtables converted to complex carbohydrates.

Not a nutritionist but my personal opinion is that the spinach will not do so, but the carrots have starch which will turn into sugar.
