It depends, what kind of medication are you on? If you are on a fixed amount of insulin, then your blood sugar can go too low if you don't eat the carbs you are supposed to. If you count carbs or not on insulin you should be fine.

what sort of diet would a diabetic be on that allows for english muffin, glass of milk and fruit in the same meal??? I can only have one, not all!!! I'm just plain jealous of you!!
Really if you don't want to eat all the calories and carbs set in front of you at a meal, don't worry about it unless you continually ignore one of the things on an ongoing basis. If you are a skinny little type 1, you really do need to eat all that stuff.
I am frequently not hungry and really don't want to eat all I know I should. So I don't. Maybe I eat a fourth of each item! I use snack time to eat apples, or nuts, or other things.
I just eat much smaller amounts of things 6 times a day instead of 3. It helps me stay in tighter control.

Wow I realy had to contain my emotion after reading this. In my oppinion Id say drop the class with a W if its not already to late. Most of the time situations like this are first resolved by talking with the professor, but it seems like she has something against you. Whether its rational or not, she's already pegged you in her mind to be just another lazy student. It also doesn't help if she's married to the dean, but if you have a medical problem that requires special attention, you need to put that first. Like in your case you have to take medication to regulate your insulin. You do have special needs and the state will always be hehind you on that one. Honestly if you had to go to the hospital because she wouldn't allow you to take your medication, then thats negligance. Your best bet is to visit the dean and show him your medical records, also get a recommendation from your doctor so that you have proof and from there will be allowed to take your meds if needs be during class. If you cant drop the class and your teacher still wont allow you to take your meds, make sure you have a witness present so she can be held liable. Although again this is all my oppinion. If you can drop the class, that would probably be in your best interest. You will need to talk to the Dean though. Just be tough and you should get through this.

I think it's ok as long as you don't exceed your daily recommended amounts of sugars and carbs that your meal plans suggest.

yes
I look at my diet as if it was a budget. I have a certain amount of money I can spend every day. It doesn't matter how I spend it as long as I don't spend it all at once.
