I also have yellow corn. I cannot get to the store. What do you think?

Add the yellow corn to your cooked rice and if you have some add a little diced bell pepper, onion and a nice dash of cumin. Voilá, Mexican rice!!!

Hey.. Corn will work but white rice i would stay away from. Do you have a can of refried beans, or maybe veggies and dip on the side? The reason i stay away from rice is cause you already have starch in the corn and the taco shell. It wouldnt be a bad idea to add some rice to the meat filling for the tacos though.

If you happen to have some salsa in the fridge you can add that and the corn to the rice while it cooks. It will have a slight southwestern flare.

If not the rice alone is fine. Although, since tacos can be a meal all by themselves, you don't have to have a side dish.

Sure you can, or if you have a few spices (you said you have corn, try this:

White Rice with Chile Strips, Corn and Cheese
2 tbsp olive oil
3 cloves garlic, peeled, minced
1 small onion, peeled, minced
2 cup long-grain rice
2 cup chicken broth
1 large bunch chopped cilantro leaves
1 cup fresh corn or canned whole kernel corn
1 cup shredded Chihuahua cheese or mozzarella cheese
1 roasted poblano or jalapeno chile, seeds removed and cut into strips

In a saucepan heat the olive oil over medium heat. Add the onions and garlic and sauté until glossy. Add the rice and sauté until glossy but not brown. Add 1 cup chicken broth, cilantro and corn. Cover and simmer, without stirring, 10 minutes. If dry, add more broth. The rice should be fluffy; don't oversaturate. Some broth might be left over.

About 10 minutes before serving, mix in the cheese and pepper strips. Cover until ready to serve.

Makes 8 servings.

Sure or just toss some hot sauce and corn in the rice and you will have a great side dish. OR dont use it as a side dish and just throw it in the meat and have soft shell tacos or burritos with the meat and rice mixture. With tacos you really dont need a side dish cuz they are pretty filling alone.

Great Question...... I use both. Just mix them together with you cook hamburger and add your taco packet. Works great and the family loves it. If it appears to be to think add some taco sauce or salsa to thin down. Just don't make it too soupy (wet).

If you have beef or chicken broth to cook the rice it that will jazz it up a little, otherwise It's just fine the way it is.

Sounds good. Next time get yourself a can of chopped tomatoes and green chilies and put them in the rice while its cooking. I love it that way.

White rice would be okay....but you should cook it in beef or chicken bouillon to give it some extra flavor.....or add a can of stewed tomatoes to jazz it up a little.
