Sautee up 3 shallots (or about 1/2 an onion) with 2 - 3 cloves of garlic that you have diced. Let them sautee until they are just transluscent, maybe 3 - 4 minutes. Season with S & P. The add 2 cans of diced tomatoes. Let this simmer for about 20 minutes. Taste for seasoning at this point.

To this you can add anything. It depends on your own tastes. My guy loves when I add seafood to this. A few scallops, clams and shrimp. Cover and let simmer just until the clams open. I generally add the scallops first, let simmer for about 2 minutes, then the clams until they just begin to open then the shrimp. If you like fish, add some firm white fish to the sauce about 5 minutes before you add any of the seafood. Top with fresh ripped basil. Pour over angel hair pasta. Serve with salad and crusty bread. It will look really pretty if you pour the sauce and lay the seafood out in a nice way.

You can also do this with roasted veggies. I like eggplant, zucchini, and peppers, done the same way. Mix the sauce with a penne, top with the roasted veggies and sauce then top with parm cheese. Bake at 400 for about 20 minutes until the cheese is crunchy and brown. It doesn't look as fancy, as the prior, but it's still delish.

As for dessert, I know this sounds strange, but I love marscapone cheese folded with whipped cream and topped with berries in a martini glass. Another thing you can do is make a granita. Add a little rose water to your flavor if your husband likes things fancy.

Summer Spaghetti Salad
(you may want to cut the recipe in half because it makes a lot)

• 16 oz. thin spaghetti, broken
• 3 medium tomatoes, diced
• 3 small zucchini, diced
• 1 cucumber, seeded and diced
• 1 each red and green pepper, diced
• 8 oz. Italian salad dressing
• 2 tablespoons Parmesan cheese
• 1 1/2 teaspoons sesame seeds
• 1 1/2 teaspoons poppy seeds
• 1/2 teaspoon paprika
• 1/4 teaspoons celery seed
• 1/8 teaspoon garlic powder

• Cook spaghetti according to package directions; drain and rinse in cold water. Place in a large bowl; add tomatoes, zucchini, cucumber and peppers. In a separate bowl combine remaining ingredients; pour over salad and toss to coat. Cover and refrigerate for at least 2 hours.

Cheesecake-Brownies

Brownies:
• 1-1/2 cup flour
• 2 cup sugar
• 1/2 teaspoon salt
• 2/3 cup applesauce
• 6 egg whites
• 2 teaspoon vanilla
• 1/2 cup + 1 tablespoon cocoa

Combine dry ingredients ant wet ingredients separately, then mix together. Spray a 9x13” baking pan and pour mix into it.

Cheesecake:
• 3 8oz packages fat-free cream cheese
• 3/4 cup sugar
• 3 eggs
• 1 tablespoon vanilla

Mix all ingredients together until well blended. Pour on top of brownie mix. Run a knife through the batter to swirl. Bake at 350 degrees F for 45 minutes.

I'd opt for a linguini al pesto or shrimp scampi as my main course (leaning toward the shrimp!) Light, rich, satisfying. Top with shaved parmesan. A nice salad of butter lettuce, fried radishes, shaved pecorino and an oil and vinegar dressing is a nice accompaniment. For dessert? Tiramisu or chocolate dipped cannoli with mascarpone! And don't forget the wine! A nice Pinot Grigio would be a great touch.

Angel hair , with a light medeterian sauce, small to medium size meatballs, a salad with lots of cheese and olives, a loaf of warm garlic bread, a chilled bottle of can ti red, for desert nothing but a triple swirl chocolate cheese cake, don't forget the candles.... soft Italian music, and immediately after desert, ask her to slow dance right there in the dining room or where ever you eat diner at... Bona-BA-Tet..

Take red, green, and yellow peppers and slice them long. Saute them in olive oil with spices to suit your taste. Perhaps, add a little white wine. Simmer for a while and serve over thin spaghetti. Serve with wine and have spumoni for dessert.
