My friend has just given me a giant marrow from her garden which is longer than my arm!

Does anyone have any interesting ideas on how to cook it? I'd like to use it as a main ingredient so that I can get rid of it before it goes bad.

I'm cooking for myself and two others so can anyone suggest any good vegan recipes? Thanks.

Thanks Frank, that looks like a good recipe. Just to let you know, a marrow's basically just like a huge courgette.

1 medium sized marrow - peeled de-seeded and halved lengthways.
1 potato
1 aubergine - 175g (6 oz), cubed
1 parsnip
1 carrot
1 turnip
1 bulb of fennel
1 can of chopped tomato
1 clove of garlic
Vegetable stock - 150 ml (¼ pint)
1 tbs vegetable oil/shortening
Salt and pepper to taste

Peel the skin, core the seeds and pith, sprinkle with salt for about half an hour to remove the bitterness, wash the salt away.

Wash peel and chop the vegetables, your looking to have everything in bite sized pieces, cubes of about an inch square or small slices.

Use a large heavy based frying pan if you have one, melt the shortening or oil under a gentle heat then add the crushed clove of garlic then the chopped vegetables, you are looking to soften not brown the ingredients, so not too hot.

After about ten minutes of continuous stirring add the stock, the can of chopped tomatoes, the garlic and then season.

Once you are happy with the flavour leave to simmer on a medium heat for about a quarter of an hour stirring every couple of minutes.

Wash the salt from the marrow then place into a baking tray, you can either
a) heap the ingredients into one half then cover with the other half of the marrow and wrap in greased foil or
b) spoon the mixture into both halves and cook them upturned.
If you are cooking the marrow as two upturned halves cover line the baking tray with greased foil then cover with foil.

Cook in a preheated oven (180c) for about 50 minutes.

Serve hot.

I haven't the faintest Idea what a marrow is... I am still looking for a picture but I ran across this while looking.
Stuffed Marrow Rings

Ingredients:

1 large or 2 medium marrows

a couple of tablespoons of olive oil for coating

1 large onion

100g/4 oz/1 cup almonds

3 slices of bread

a good handful of fresh basil (or two teaspoons of dried herbs of your choice)



Preheat oven to 190C/380F. Cut the marrow into approx. inch/2cm rings. Cut out the seedy middles (off to the compost!) and peel if necessary (fresh from the garden ones don't need but older ones may be tougher) and rub with the olive oil. Lay on a baking tray. Combine the onion, nuts, herbs and bread in a food processor until it reaches a nice pate like consistency. Spoon this mixture into the rings and bake for about half an hour or until the marrow is beginning to go golden and soft.

i always stuff marrows, there are loads of things you can stuff it with- i like to use burgamix or sosmix-i think theyre vegan.id cook some onion and garlic in oil add diced carrots and peppers(vary this to your own taste anything will work really) chuck in sosmix or burgamix add liquid-stock or tinned chopped tomatoes salt pepper some herbs pile into the marrow(you can use rounds as above or cut in half legthways and scop out seeds) and cook in tray in medium hot oven till marrow is soft(rounds will probably cook quicker and cookin time depends enormously onn the marrow could be 20 mins or 50 mins but will be fine kept warm for a while). i also use cous cous with veg as stuffing or rice, the possibilities are endless! PS frank its lika big courgette(zuchini) if you know what that is. pps use good flavours-marrow is agreat base for something like stuffing but can be quite bland

Oven Roasted Marrow (Zucchini)
1 large or several small Marrows
Extra Virgin Olive Oil
Salt & Pepper
Per-heat oven to 400F degrees
On large Baking sheet, drizzle EVOO.
*Peel Marrow if needed
Cut Marrow in to chunks (fairly close to the same size) Toss Marrow pieces with EVOO. Add Salt & Pepper. Put of baking sheet spread out. Oven Roast until tender. 20-30 mintues usually..start testing at about 15 mintues & stir them around.
*If the skin is not too tough I leave it on if it is I peel it.

1/ using a potato peeler, peel the marrow, 2/cut the ends off but cut them all the way round like this,wwwwww ensure that you cut one w deeper than the rest,3/then using a long knife or spoon, take out the middle(seeds) 4/ stuff with a mix of your favourite stuff, then put the ends back on, drizzle olive oil over it, wrap in tin foil and bake in a hot oven,

At the risk of my reply being taken the wrong way the best thing to do with a marrow is stuff it. sorry sorry
Just use your fave mix of things. I would love any of these.
Roasted mediterranean veggies mixed with rice.
Mixed mushrooms and leeks in a red pesto sauce.
Mashed potato mixed with cabbage and spring onion.

Remember to use lots of herbs and flavourings as the marrow is pretty bland.

Cut the marrow lengthways, hollow out the seeds and stuff it with a filling of your choice. Bake in the oven for around 45 mins covered with foil.

I don't know what marrow or courgette are.

Marrow is the term for the blood producing tissue in the bones, but it sounds like you are referring to some kind of plant. I'm going to run search on "marrow" and "courgette" and try to find out what you're talking about.

PS: They are squash. Thanks, I learned something new today. Sorry, I'm not much on recipes, I just make things up based on what I have in the kitchen.

here in the U.S.A. we call it a zucchini, and there are lots of ways to cook it......but if you are cooking it for a few people, the best way is to 'stuff it' and I call them zucchini boats....
cut the squash in half lengthwise
scoop out all the 'pith' (seeds and surrounding tissue, not the squash meat)
make your favorite stuffing....I use tomatoes, onion, celery, green peppers and rice.....saute' the veggies until tender crisp then add to the uncooked rice and add the amount of liquid for the rice to cook properly...cover and cook until rice is tender, scoop into your zucchini boats mounding them high, place in a baking dish cover and bake 350 degrees for about 35 to 45 minutes....I know you said vegan but I would at this point uncover and top with cheese return to let it melt then serve.....maybe you could use a vegan type replacement for the cheese or serve them without...
