Your problem is probably that you're trying to cook so much at once. If the oven appears to be working, try cooking it at between 400 and 450 degrees F. It really should have cooked already within a hour...but it should work even with so much of it. Don't cover it with foil; let it roast uncovered. Corn and peas are a safe bet for vegetables because people always go for whatever is familiar.

You could try frying half the pieces (frying is faster) and baking the rest. The more chicken pieces in an oven, the longer they will all take to cook.
The best thing to do is try to find another oven (25 in one, 25 in the other) if you can. Friend's house, maybe?
Try turning up the heat in the oven, too.

Seriously, you have either got the temperature too low, knock it up another 20 degrees. Otherwise, your thermometer may be incorrect or totally knackered. If you are having a false temperature before the heating element cuts out, the same thing, knock the temperature up.

No suggestions on your chicken sorry.
Try a huge fresh veggie salad. Simple, no cooking & very healthy. Don't dress it, have several different dressing for the people to put on themselves.

I wouldn't even try to get a chicken to cook. They make a terrible mess of the kitchen, pooping everywhere. Drives my dog crazy too.

put tin foil over it and it will definately cook fast !i just had to fix that major amount of chicken just last week and i baked two pans at a time covered in tinfoil and vio'la it did get done !! well good luck i think any kind of vegetable will be good !
