Cats and Rats don't have much meat on them. One of my pet Rats, for example, weighed 500 grams - which is about 18 ounces ounces or a little over a pound. When you take out the skeleton, intestines and the fat that would leave you with very little meat.
Cats and Rats aren't exactly heavy on the meat content in their bodies - so it wouldn't make much sense to butcher a Rat or a Cat just for the little amount of meat you'd get out of them. It would take up too much time and effort - and time is money.
You'd probably be able to tell the difference anyhow. The meat would be tough and gamy. It wouldn't taste like what you're used to. Try eating venison or alligator or frog or rabbit and you'll know you aren't eating chicken!

What if they did? Some cultures consider that food, and good food at that. Many cultures eat things we might consider odd, but that doesn't make it bad necessarily.
Why don't you flip a lip around a cat or rat that has been well prepared and then come back to the questions and let us know how it went.

I guess restaurants have health inspectors who come and examine the restaurants for cleaniness, use of proper ingredients, etc. I strongly believe that the Chinese food in the US doesn't serve rat or cat!

I was in China this month and saw dog meat on a menu..in Beijing..so it´s not just remote rural areas where they eat dogs!!! I don´t know about cats and rats though...on a few occasions I went to a buffet or told the waiter to just prepare food for a certain amount of money and put it on the table (when I was with more people) so I can´t be completely sure I didn´t eat dog or smt else I would never choose to eat...

It's not too common. Rats I've seen, probably tastes like chicken. Never seen cats being served though. Dogs are more common.
Anyway, that's for the rural backward areas of China. For the more educated population, they dun eat such things anymore. Their fav meal is Big Macs.

How do you know any food you buy or get at a resturant doesn't have cat or rat in it??
The reputation of the establishment is the only way. If you are not sure, don't eat there.

Wow, you must be an IDIOT. well first of all, they dont serve that ****. they dont eat RATS. they might eat a dog... but i doubt they serve that shiet in there resturants. im 1/4 chinese, i love chinese food. You're too sterotypical. oh and theres something called a menu too, or a waitress that can answer your idiotic questions.
