I love eating at mexican restaurants.... not mexican-american, but authentic mexican. Can anyone cook like this???? If you can, how do you make tacos, enchiladas, the cheese dip....... I would really appreciate any recipes or cooking tips!!!

If you are truly looking for authentic Mexican food then it is too simple. I have a home in Mexico and in the USA. Restaurant food in America is NOTHING like the real food in Mexico, my mother-in-law who is Mexican Indian had no idea what a burrito was. The meals consist of basically the same thing night and day, black beans, salsa and tortillas. Of course on spacial occasions we have enchiladas, but my favourite is the tamales, LOVE THEM! My father-in-laws favourite food is the taco loco which consist of a fresh corn tortilla, salsa made only of Chile peppers and a few beans. I found a good place for recipes on about.com. It may sound surprising but after cooking a few peoples recipes for enchiladas I found there's to be the best and easiest.

I have begun learning some family recipes and now I am teaching my sisters. I really don't have any recipes written down. If you have a friend that is mexican, that would be the best place to start.

I think the best way to actually learn how to make that specific food, is if you have a mexican friend who is willing to teach you how to cook their food. It wouldn't hurt to try asking someone.

I love to cook (and eat) authentic Mexican. Here is recipe that is a bit different as I have put together a combination Mexican and Brazilian idea - give it a try:

COXINHA DE TINGA

DOUGH
1 envelope Knorr cream of chicken soup mix
2 cups milk
2 egg yolks, beaten
½ cup cornstarch
½ cup flour
FILLING
½ lb. chicken, cooked and shredded
½ lb. pork, cooked and shredded
2 medium white onions, finely chopped
4 tomatoes, finely diced
1 potato, diced and cooked until soft
1 carrot, diced and cooked until soft
3 cloves garlic, minced
2-5 chiles chipotlé (to taste)
Salt
2 tbsp. olive oil
COATING
2 egg whites, lightly beaten
2 cups bread crumbs
Oil to deep fry

For dough: Heat cream of chicken soup mix and milk to boiling, stirring continuously. Remove from heat; add yolks, cornstarch and flour. Heat and stir until it doesn’t stick to pan. Let cool.
For filling: In blender, puree 1 tomato, garlic and chiles chipotlé. In large frying pan, sauté onions until translucent. Add remaining tomatoes to onions. Add potato, carrot, chicken and pork. Pour in puree from blender, stirring to coat. Add salt, to taste. Let simmer 5 to 10 minutes, until heated through.
In separate bowls, place egg whites and bread crumbs. When dough has cooled, mold dough leaving hole for the filling. Place 1 to 2 tbsp. filling mixture in dough, then cover with dough to make a ball. Roll in egg whites then in bread crumbs. Deep fry in hot oil, (approximately 350 degrees F) until golden brown. Remove to paper towel to drain. Serve.

yum.. first you buy mexican ingredients.. american tortillas are nothing like the real thing!!
