BREADED PARSNIPS
4 med. parsnips
1/2 tsp. salt
1 egg
1/2 c. fine bread crumbs
1-2 tbsp. butter or shortening
Peel and slice parsnips lengthwise in 4 or more pieces. Place in 1 1/2 quart saucepan. Sprinkle with salt and add cold water to barely cover parsnips. Cook until nearly tender, about 10 minutes. Drain. Slightly beat egg and roll parsnips in egg and then in fine bread crumbs. Fry in butter until brown on both sides. Serve as vegetables.
CREAM OF PARSNIP SOUP
1 lg. onion
1 c. water
2 c. cooked parsnips
7 c. milk
6 tbsp. butter
4 1/2 tbsp. flour
1 1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. paprika
Mince the onion and boil until tender in the water. Puree the cooked parsnips and onions by forcing them through a sieve. Scald the milk in a deep kettle. Add the pureed vegetables. Blend the butter and flour and stir into the soup, continuing to stir over low heat until the mixture is smooth and slightly thickened. Sprinkle with salt, pepper and paprika and serve immediately. Serves 8.

I am a former chef and treat parsnips like carrots, you can do anything with them and some of the recipes from the previous respondants are some of my favorites, mix them with other veg as a cassarole, soups (I like to mix sweet potatos, parnips, carrots, butternut squash and leeks for a nice winter soup), fry them like french fries as stated, roast them with other veg for a side with a veggie entree, chopped into veggie patties, made into crouquttes with brown rice and tofu, I have even added leftover into a british favorite "Bubble and Squeak, a mix of leftover mash potatos, boiled cabbage, onions and the parsnips fried together like big pancake and serve with veggie baco slices, I fooled a man from Ireland that he was eating a favorite dish from back home, there is another Irish dish called "Colchonan" a mix of cabbages, onions, leeks, potatos all stewed to a mush I add 3 or 4 chopped parsnips for an extra kick.
Try them in as many ways as you can think of, you may come up with some new ones on your own.

I ahve a very simple recipe, peel your parsnips and put them on a baking sheet, drizzle some extra virgin olive oil on them and salt and pepper. Next add some dried 1 tsp of dried oregano on them roast in 400 oven for 10 minutes or so and they are yummy!

peel, slice diagonally, steam till almost done.........then gently fry in a bit of butter till tender and browned a bit........season and serve. Also very good peeled and roasted in the oven with your roast or chicken, just sprinkle with salt n pepper and baste a few times with pan juices. ( in this case leave in big chunks)

Slice them and saute with butter and brown sugar, YUMMY!
Add them to stews, awesome!
Cook them side by side with carrots, potatoes and onions in a pot roast - WOW!
