When I have an abundance of ripe tomatoes make home-made chili sauce (canning recipe) Which I then use to make home-made chili con carne, stuffed bell peppers, and several other dishes. I use this instead of adding canned tomatoes and what makes it even better, is I know it's all natural. Here is my recipe for chili sauce:

14 large tomatoes
3 large onions
5 large green peppers
3 T. salt
3/4 c. sugar
2-3/4 c. vinegar
Hot peppers (jalapeno or Hot banana) to taste
cinnamon, ground cloves (optional)

Peel tomatoes and onions. Remove seeds from green peppers and chop fine; remove seeds from hot peppers and chop fine (for hotter sauce add seeds from hot peppers). Stir all together and add salt, sugar and vinegar. Cook slowly for 45 - 60 minutes or until thick, stirring occasionally. Pour into hot sterilized jars and seal. Makes 5 pints or 3 quarts. For a different taste, add 5 hot peppers and 2 tablespoons of cinnamon and ground cloves.

I usually don't use the cinnamon or ground cloves in my personal recipe.

You might also consider making tomatoes and dumplings.

Peel your tomatoes, place in large pot and cook down. Salt to taste. Then take Bisquick and make drop dumplings (recipe is on the back of box). Cover until dumplings are cooked. Serve in bowl while hot, once dumplings are done. Must eat dumplings with tomatoes -- it is unusual, but delicious if you enjoy tomatoes. Enjoy.

Appetizer- A salad or a brushcetta

Dinner- You can make a fresh pasta and but some tomatoes in it chopped into little pieces. You could also make a fresh pizza with Basil and mozzarella.

Lunch- You could make a grill cheese with tomato in it or make a ham and cheese sandwich bake it in the oven with tomato on top.

Tomato sandwich. Toast, mayo, pepper and salt and tomato. In a skillet use olive oil (drizzle around pan a couple times) with some crushed red pepper (to your taste), chop fresh garlic (usually around 2-3 cloves) cook alittle bit in the skillet, just tell tender. Not to hot, you don't want to burn the garlic. Now chop some tomatoes add to the skillet. Let everything hangout and simmer for a few minutes tel warm throughout. And serve over your choice pasta.

Fried Green Tomatoes

Here's what you do:

Get some Zatarains Fish Fry, season with garlic powder, onion powder, black pepper and salt, be generous with the salt, and put in a bowl (I use Adobo in the spanish section at the grocery store, and Tony Tachere Cajun Seasoning - they are both salty) or you can just use the salt .

Get some plump green tomatoes fresh from your bush and wash them well.

Slice them thick, about 1/4 inch.

Now coat the slices in the Zatarain spice mixture, and fry in vegetable or other oil, until breading is golden on both sides, you really only want to flip once or twice max. Drain on paper towels.

Note: I hated these as a kid when they were sliced too thin and breaded in flour! They were gross and slimey to me, made that way.

salsa!

2-3 medium sized fresh tomatoes (from 1 lb to 1 1/2 lb), stems removed, finely diced
1/2 red onion, finely diced
1 jalapeño chili pepper (stems, ribs, seeds removed), finely diced
1 serano chili pepper (stems, ribs, seeds removed), finely diced
Juice of one lime
1/2 cup chopped cilantro
Salt and pepper to taste
Optional: oregano and or cumin to taste

Start with chopping up 2 medium sized fresh tomatoes. Prepare the chilies. Be very careful while handling these hot peppers. If you can, avoid touching them with your hands. Use a fork to cut up the chilies over a small plate, or use a paper towel to protect your hands. Wash your hands thoroughly with soap and hot water after handling and avoid touching your eyes for several hours. Set aside some of the seeds from the peppers. If the salsa isn't hot enough, you can add a few for heat.

Combine all of the ingredients in a medium sized bowl. Taste. If the chilies make the salsa too hot, add some more chopped tomato. If not hot enough, carefully add a few of the seeds from the chilies, or add some ground cumin.

Let sit for an hour for the flavors to combine.

Makes approximately 3-4 cups.

for something simpler try a fresh homemade BLT. Yum!

A tomato and onion salad:
2 to 3 tomatoes
1 large onion cut into thin slices crosswise
1 to 2 Tbs. imitation bacon bits
Bottled ranch dressing
Cut the tomatoes into thin to medium(your preference) slices,toss with the onion slices,top witj the dressing,finish with the bacon chips.
Also:Stuffed tomatoes
Make a tuna salad: 6 oz. tuna drained,1/2 cup salad type dressing,2 tsps. Mrs. dash spicy ,2 tsps.vinegar,1 packet splenda,1 hard boiled egg chopped,1 tsp. salt.Hollow out tomatoes and stuff with mixture.
The onion salad is also good with French dressing or Blue Cheese dressing.

Not one above me answered SUN-drying them.... That would be my answer. Cut tomatoes into wedges, sprinkle salt and put them under the SUN to dry or if the weather is bad, put them in a very low heat oven for an hour or two. Make sure that the tomato juices has completely evaporated before keeping them in tightly sealed container.

You can use SUN-dried tomatoes to make tapenade, sauce for your pasta or any tomato based dishes. It will surely give another flavor to your meal.

I love this time of year!!

Last weekend I made huge batches of tomato (pasta) sauce and salsa and froze them - this is what I did- but while you are doing this, make sure to enjoy while you can- chop a couple tomatoes, add chopped fresh mozzarella cheese, fresh basil, some balsalmic vinegar and olive oil and let steep for an hour or so, add hot cooked spagetti and eat as is or chill and eat cold- or my favorite- a thick slice of tomato on white bread with hellman's, salt, and pepper... heaven!

Crock Pot Tomato Sauce:
Chop peeled tomatoes ( dunk each into a pot of boiling water for about 20 seconds- you will see the peels start to explode, pull them out and the peel will slide off)
chopped onions, minced garlic, fresh basil,(optional:) chopped green peppers, sliced carrots, red wine
Put all in crock pot and cook on low for 10 hours, add tomato paste to thicken, cool and place in plastic storage containers and freeze.

Fresh Salsa-
Peeled chopped tomatoes
Jalapeno peppers- split and seeded
onions
cilantro
lime juice
put in a food processor and pulse until chunky- and serve as is, or pulse unitl pureed and add tomato paste to thicken, store in plastic container in the refrigerator.

You can make your own ketchup, tomato sauce, and stewed tomatoes. You can slice them, season with salt, pepper, and garlic. Cover with plastic wrap and serve at dinner time. You can bake them, put into soups, (not just tomato soup) and give away the excess to friends and neighbors.

Anything that has tomates in it. Sauces, salads,etc. Cut the top off a tomatoe add a slice of mozzarella cheeze and broil for 15 minutes.
