Depends on if you've been partying or just plain starving! Here are some things that come to mind:
1. A nice fat sandwich on whole grain bread, with mustard, mayonaise, dill pickle slices, juicy tomatos, cheese, and meat. And a nice glass of milk.
2. Cold pizza or spaghetti
3. Scrambled eggs with bacon and cheese
4. Waffles with butter and real maple syrup
5. Leftovers

At 3 AM, I tend to make myself a coffee-cup egglet.
I toss a couple of eggs in a foam cup, add a bunch of shredded cheese, 1/8 to 1/4 stick of butter, stir with a fork, and microwave it. I have to stop every 20 seconds, and stir it again. I repeat until it's a wet solid; if it ends up all dry, I add some more butter. I then salt-and-pepper it, and stir.
It's got some fat, which means I don't wake up hungry two hours later. It's got protein in there, but not a lot of carbs, which means I'm able to get back to sleep.
Why a foam cup? Because I don't want to carry a real coffeecup back downstairs, and wash it; that'd wake me up too much. When you cook egg in a coffeecup, it's really hard to clean, so I don't want to wait until morning to carry the cup down. A foam cup and plastic fork, though, I can pitch in the trash.
Any icy cold milk also works nicely in the middle of the night.
Sometimes, I fill one of those huge (maybe 24 ounces?) disposable red or blue cups, fill it with spoon-size shredded wheat, fill it with cold milk, sugar it, and take that to bed with me. (The sugar-frosted shreddies are too sweet, especially in the middle of the night, and I can add about half as much sugar when I do it myself.)
When I eat other cereals, the noise from my stomach keeps me awake for a couple of hours, but shreddies don't do that. Not sure why.
If I'm really dead to the world, AND think I'll have no trouble getting back to sleep AND we had pizza, then cold (refrigerated temp, not room-temp or reheated) pizza seems to really hit the spot. And it has enough fat to keep hunger away until morning. But if I'm having any trouble at all sleeping, I avoid it.

i love leftover lasagan the best but sometimes ill make myself a mini pizza. to make some fast, split an english muffin in half, toast, top with a little canned sauce, top with veggies or whatever you like, a little grated cheese (i keep a pre-grated bag exactly for this purpose) and nuke them till the cheese melts. easy, and tasty. for a sweet snack i love taking two chocolate chip cookies, putting a scoop of vanilla ice cream between them and having a homemade ice cream sandwich.

in the middle of the night you don't want to go mucking around spending ages cooking.
1) Toast with a spread
2) Leftovers, especially pizza
3) Milo
4) Biscuits
5) Boiled/scrambled egg
6) Banana - fills you up and helps you sleep :)

anything that is not too heavy for you, like a vegetable salad with a little dressing could do. never eat heavy at midnight because if you fell asleep, you will experience nightmares and your pancreas will find it hard to digest food. eat light...
