Is there any reason why I couldn't bake it in a 8" or 9" cake pan? Would I have to change anything other than baking time?

Instead of one sheet cake in a 9 x 13, put half the batter into either an 8" or 9" square or round pan. So if you're making a full recipe, use 2 pans. Baking time will be less for the smaller pans because you're baking a lesser amount per pan. You can bake both pans at the same time. Don't forget to grease and flour the smaller pans if you plan to take them out to frost them as a layer cake.

No, i don't see why not. Just make sure that you don't overfill the pan, because it might be more than you need, and you don't want too much batter. But yeah, you do need to change the baking time...that should be it.

also i wouldn't use sheet cake frosting on a normal cake- the sheet cake frosting is usually poured on, like a glaze, so use a normal frosting.
