Cops who are "out in the middle of nowhere" don't generally drive those sorts of cars, for just that reason.
In places where those sorts of vehicles are common, another officer (possibly one who drives a transport van) will do the prisoner transport for the arresting officer.

Very simple: they call over the radio for a cage-car or a wagon, and hold the arrested person there until they arrive.
This, by the way, is one of the very reasons why you will not see cops in rural areas patrolling in coupes.

Well officers on motorcycle and in two door coupes are traffic cops..so they spend their day giving tickets not taking 911 calls...but if they have to arrest someone for maybe disorderly conduct ect.. they call another unit to come pick the suspect up.

Normally cops arent on hogs or coupes in the middle of nowhere. Its not a safe way of patrolling in remote highways.
As far as coupes, they call for backup and hold a suspect outside of the vehicle.

When a cop is in the situation you describe, they already know they are going to make the arrest. So as a rule they call for backup before they actually place you under arrest. In some town/cities, they call for backup as soon as they make the traffic stop.
