Kitten food is higher in calories than adult foods. Choose a good quality (eg Eukanuba / Iams / HIlls) food. Also try giving some fresh meat eg mince or stir fry strips (cooked or raw).

You really need to consult a vet. This is a strong indication of a medical condition.
If you have tried a variety of canned food and dry food with no luck...you have a problem...and you need to get help with it. Do keep in mind that fish flavored canned food is usually more attractive to a noneating cat. Try Fancy Feast Salmon Feast....Go to a Natural Food store and try a Pet Guard canned flavor and dry flavor. Try three bowls with different dry foods and a bowl with a little soft kibble (softened pellets) food in each one...a small amount. If there is a type of treat the cat likes...put a couple in each bowl.
Don't force anything. Toys, tunnels, attention, playing with cat and loving up on your cat with soft words, loving looks, soft touch and petting...can help ...as part of the problem may be depression or stress

Feed him baby food, make sure that it does not have onions or onion powder in it though because it will cause their red blood cells to burst causing them to die. Feed them rice cereal for babies and also get some Nutracal a high calorie paste that you can add to their food. Do not give your cat milk or cheese, this will cause him to have a severe case of diarrhea which will in return cause him to lose even more weight. Switch his food to a high calorie dry food such as then start adding the Nutracal which you can get at any petstore. Give the baby food and rice cereal as a treat later on in the evenings or in place of can food. You can try adding the Nutracal to the babyfood and be sure to heat the babyfood up slightly to entice him to eat. You can try and get prescription Hills A/D cat food it is a canned food but is used for animals that need to add on body weight after like a serious illness or surgery.

Give him Nutro Kitten food, though any kitten food will be fine. If you can't get Nutro, then go with Purina Kitten Chow. The kitten food is meant to add pounds for growing cats.
Also, be sure to check his dig box for liquidy or bloody stools. He could be quite sick, and that will cause weight loss. Do you know how much he is eating? If he eats a lot, and still doesn't gain weight, take him to the vet. He could be quite sick.

We got a bag of Evo, which was $17 but it feeds an adult cat for a little over 2 months. It's 50% protein and our guys put weight on with it fairly decently. If it's too 'rich' for their stomachs, mix it half and half with another food till their digestion can handle it.
I also supplement with some small cut up raw meats (off our supper meat before cooking it) which they enjoy. That's pure protein and helps with their coat and muscles.

I know you said he doesnt like canned food...But try to put it in a glass cat dish..put it in the microwave long enough to warm it up just a bit...and try the new shredded turkey and cheese in gravy kind..Im not sure which company it is though but I think its either friskies or whiskers.....The reason why I say this is because some cats dont like canned food because it doesnt smell right or doesnt smell fresh enough and when you warm it up the smell is stronger and for some reason it smells more fresh.
But if that doesnt work try to go to your local pet store and ask them which dry food would fatten up your cat the best ^ ^
Also dont try to give him any human food except maybe raw tuna...Human food can upset his stomach, congest him, and give him diahera (sp)..
If none of this helps the best thing is take him to the vet and explain the situation.

Take him to the vet. You need to find out why he is underweight. There is probably some kind of medical problem behind the weight loss.

have you tried just regular canned or packaged tuna? like you would use in salad with nothing added. either the flaked tuna or the albacore.
either that or you can mix a little kitten food with the adult cat food to add extra calories.
but watch the weight gain. as the cat gains the weight, gradually decrease the kitten formula.

Even though it's an adult I've always heard to feed them kitten food when they are underweight. The ProPlan kitten food is a good brand.

its important to go to the vet and see what the real problem is
NEVER NEVER NEVER EVERRRRRRRRRRR feed your cat canned tuna THIS DESTROYS THEIR VITAMIN B INTAKE and is very fatal.
try feeding whiskas pouches or ocean whitefish friskies pate. if it doesnt like canned cat food (Canned cat food IS VERY IMPORTANT) mix it in with their dry food.
Baby food works too. But the best advice I can give is see your vet!
