I always use Hellmann's mayonnaise, Mrs. Dash seasoning mix ( the Table Blend flavor), a tiny amount yellow mustard, salt, pepper and a dash of garlic powder. I use the same ingredients to make the filling for my deviled eggs. Sometimes I'll also add a spoonful or two of Hidden Valley Ranch dressing. I think it's very yummy !!

This should do it!
Egg Salad Sandwiches with a Twist
12 bacon slices
8 large hard-boiled eggs, peeled, coarsely chopped
1/3 cup finely chopped celery
1/4 cup chopped pimiento-stuffed green olives
1/2 cup mayonnaise
1 tablespoon Dijon mustard

12 slices white sandwich bread, toasted
12 lettuce leaves

Cook bacon in heavy large skillet over medium heat until brown and crisp. Using slotted spoon, transfer bacon to paper towels to drain. Cut bacon slices crosswise in half.
Combine chopped eggs, celery, and olives in bowl. Mix in 1/4 cup mayonnaise and mustard. Season with salt and pepper.

Place toast slices on work surface; spread lightly with remaining mayonnaise. Divide egg salad among 6 toast slices. Place 4 bacon pieces, then 2 lettuce leaves atop egg salad on each. Cover with remaining toast slices, mayonnaise side down. Cut sandwiches diagonally in half.

Makes 6 servings.

I'm not sure what you've already got in your egg salad besides the hard boiled eggs. So I use Miracle Whip or mayo, yellow mustard, sweet pickle relish, and fresh parsley and chives. It also needs a little salt and pepper.

My egg salad:

Hard boil eggs, cool, and chop them coarsely; don't mash them up, that's just gross! Add twice as much mayo as yellow mustard, depending on how many eggs you use. Never Miracle Whip...ugh!!! Chopped fresh celery, Lawry's salt, black pepper, and a little chopped onion, and that's it. You could also add some paprika and/or curry, that would be good too.

Try adding some finely chopped onion and celery. You could also add some dry mustard or a little cayenne pepper to add heat.

potato? I use eggs, mayo, onion, a little mustard, celery, red bell pepper, green bell pepper, and string cheese cut into circles. sometimes a little bacon, cut into bits and fried crisp
