Pretty much any gun that can fire .308, .338, or 30-06 rounds. Though .50 caliber is sometimes generally considered armor piercing.
See: http://en.wikipedia.org/wiki/Armor_piercing_round
Contrary to popular belief, "cop killer" (KTW) rounds are not particularly armor piercing.

Any gun of the caliber the the bullet is made in can shoot an armor piercing round. Think of it like this: the bullet is the arrow the gun is the bow. as long as the arrow will fit the bow you can use it.

Any gun that has the caliber of AP round.
But seing as how this is in LE and police. Not many LEO's are allowed to carry AP rounds or even FMJs. We are supposed to use hollow points beucase they have the same ammount of stopping power with the higher caliber rounds, but they do not travel through the suspect and become a hazard to anyone else in the area.

Just about any handgun and rifle can fire armor piecing rounds, if they are available. Sometime criminals make their own. However, these rounds are made with such a hard substance, it will wear out the rifling on the barrel , if too many are shot through it.

AP bullets describe the ammunition, NOT the gun. AP rounds can be made for EVERY caliber of weapon.
