All honey is organic because it is a byproduct of living bees.

characteristic of, pertaining to, or derived from living organisms:
You guys who say otherwise have a distorted perception of what organic really is. You guys must have some trendy health food definition of what "Organic" means. Just because there are chemicals in the pollen it doesn't mean the honey wasn't derived from living creatures.
However, it is probably the reason the honey bees are dying out.

If you mean organic in the scientific sense, it IS organic. If you are referring to the current trend towards organic foods being those grown without chemicals, then with honey you simply can't control it's environment enough to legally claim it as organic. The bees could collect nectar from an area that uses chemicals, which would then get into the honey.
In my opinion all honey should be considered organic as long as you don't chemically treat the bees or the hive. But that's my opinion.

Bees are wild animals or insects like birds, they also travel miles to various flowers to collect the nectar to bring back to the hive and have it processed into honey.
Organic is a system of quality control, were the fruit, veg or meat has been produced under strict guidelines and no chemicals can be used, hormones or pestisides. With beekeeping you put the hive in an orchard and hope the bees with pollenated the fruit and as a bonus make honey with the nectar.
You may find unfiltered or unpasturized honeys these are more rustic, I prefer the darker buckwheat honey myself.

Honey is not something that you can control its environment because bees can go harvest pollen from flowers that have been sprayed with pesticides and exposed to non-organic substances. Honey is also raw and pasturized or cooked. The raw contains the nutrients & healthful benefits that have been cooked out of the other. Raw is obviously better for you but pasturized has been made good for shelf life.

Honey can't be certified organic because bees, being foragers, may gather from flowers that may have been sprayed.
