i am being tourght to bone chickens and i can never seem to keep my knife sharp i need to know the quickest way to keep my knife sharp and do the hand held ones like this (displayed on this web site work as good as thay say)

The grocery/meat market I worked for had a butcher who used a long, thin steel rod to 'hone' the knife often during use, it is now made of ceramic, or diamond coated steel, or like the old ones, hardened steel and they are naturally called 'sharpening steels', used to keep an edge while working with the knife. They must be sharpened occasionally on a sharpening machine, or a stone used, etc. Hope this helps. Good luck.

I have and use the ''standard'' system mentioned on the website...while not the fastest to use, if used on a good knife,
the edge lasts quite a while and can be touched up with
a steel to keep you going.
A lot depends on the type of steel in the knife: Grandma's old
kitchen carver is probably carbon steel- easy to sharpen, but
quick to lose an edge. A newer stainless steel knife might
be a beast to first sharpen, but hold an edge for a long time.


[ I use Grandma's knife a lot: it reminds me of all those meals she made, and it's easy to re-sharpen.]

Yes the sharpeners like the ones on the web site work very well and are really handy. I keep one in my truck while hunting and one in my tackle box while fishing. Happy hunting/shooting!!
