I love sushi and would like to start making it at home. For those of you out there who make it from scratch....

-there are many rice cookers out there, any specific brand names you'd recommend that makes the rice just perfect for rolling sushi?
-how much cooked rice do you need to make enough sushi for four people?

I don't make sushi but love sticky rice. Any rice cooker made in Japan will work. I have a Panasonic now, I have gone through a few. The secret is in the rice and the preparation. Use a short grain rice, Cal-Rose is what I use. Rinse the rice 3 or 4 times. Let stand about a half hour in the water that cannot be drained before cooking. It will come out very sticky.

It is more the type of rice than any fancy machine. Just buy an Asian short grain rice which is rounder than it is long in this area we use Cal- Rose. Follow the cooking instructions on the bag. The most important step is fanning the rice while gently separating it with a fork while your mixing in the rice wine vinegar to flavor the rice. You don't even need the fancy rolling mat . I learned to make sushi using aluminum foil. There are many sites on line where they have step by step instructions with photos. I know this wasn't what you were asking but thought it might be useful info anyway.

Its more about using the right type of rice and cooling the rice correctly. not how you cook it. A rice cooker is pretty much a rice cooker get one that has Fuzzy logic so it detects when the temperature starts to raise meaning the rice is done. And unless you cook a ton of rice, you don't really need a rice cooker they just take up space. Alton Brown did a great show on this for good eats on food network you might find his recipes there
