I lived on Rice & Chicken when I was in College and broke.
First I made a chicken soup with a whole chicken, cover the chicken in water and add onion, celery,carrots, potatoes.
Remove the boiled chicken and take all the meat off the bones.
You can have the soup for one meal then the boiled chicken with rice for another.

Keep things like rice, fresh vegetables and ground beef around. Instant noodles are also good and you can add stuff to them, like spices and veggies. Homemade mac and cheese is always really yummy, too.
Casseroles and soups are really easy, and they can be frozen and kept until you need them.
For a simple casserole, just toss in a can of soup, i like cream of chicken or mushroom, some milk or cream, some sliced potatoes or elbow macaroni, some ground beef or chicken, and whatever leftover veggies or toppings like bread crumbs you have laying around.
Just be creative, sometimes when you mix really weird things it ends up tasting yummy :) hehe

Poor mans Shepard pie. Make instant potato's, cook up some hamburger, here make it easy for you.
1 pound ground beef
1 can vegetable soup
Instant mashed potato's (those you got to guess on, if you like potato's make two servings)
Brown beef and drain it, add your can of vegetable soup no water. stir beef and veggie soup together and then put it over instant mash potato's. It's my favorite. Fills you up and there's always left overs which are still good.
