Whenever I buy brownies in a bakery, or even when my friends/family make them and bring them to parties, they are perfectly flat and square. When I make mine the tops aren't flat, it raises up in the middle, and the edges curve up

what i do is when i make brownies and i want them square i take a square glass and use it like a cookie cutter or any thing that is square before you bake it

The edges are cooking faster than the middle. You need to reduce the cooking temperature by 10-15 degrees and cook a little longer. If you have a pizza stone - put that on the bottom shelf while you are baking to keep the oven temp more consistent. These tips will help some. To cut them square - use a ruler as a guide...

Also - don't compare home made to the bakery. bakeries have many ways to "fix" stuff. They cut the edges off brownies to make them flat and use the edges in the trifle desserts that they sell.

There is no way to make them bake perfectly flat. But if you use the right kind of icing, and pour it on when the brownies are still hot it will smooth out the tops. Also many places that sell brownies will cut off the edges to make it look nicer and then cuts them very carefully into nice neat squares.
