Do you use velveeta or cheddar when making homemade mac & cheese? I've seen more recipes with cheddar, I would think velveeta would give it a smoother creamier taste. What is your preference?

Use both. You'll get the flavor of the cheddar with the creaminess of the Velveeta. We're an indulgent society. Go for it.

If I wanted smoother and creamier I could buy that in a box, called Kraft. I like homemade baked mac and cheese and the only cheese for that is very strong Extra Sharp cheddar.

People use Velveeta because it melts easier than cheddar. Trymixing cheddar with some cream cheese and it will give you velveeta texture and the better taste you are looking for.

Velveeta for cooking and cheddar for eating. Then again it depends on your taste but that is a good rule to follow.

Cheddar hands down. I'm from Wisconsin and Velveeta is not real cheese and is not allowed in my kitchen!

Use sharp Cheddar and Monterey Jack! the Jack is smooth and creamy. Also try a little bit of cayenne pepper. Just a pinch! Yum. There is a great recipe on cooks illustrated.com but you have to be a member. I don't have it or I would give it out. But either way try those two. It is a more real home cooked taste than just one or the other of your other choices.

Why eat a phony processed cheese like velveeeta. Use the good wholesomeness of cheddar.

I use Velveeta...it is creamy and smooth...it also melts without a puddle of fat rising to the top of the pasta like cheddar does when melted.

Velveeta melts better... cheddar gets oily and when it cools it gets more solid & rubbery than velveeta.

my mac which everyone loves...is made with Velveeta. You can top it with some grated chedder or cheese of yer choice! Also a great topping that I get alot of compliments on is Panko breadcrumbs! Good luck!! yummy!
