I use a mix of ground burger and ground sausage, add in some bread crumbs, sometimes I used seasoned, if not seasoned I add in some garlic salt and pepper, I don't use egg. I roll in balls as big as I want and cook them up in a skillet with some olive oil and garlic.
If you want a more exact recipe, here is one from allrecipes
INGREDIENTS
1 pound lean ground beef
3/4 cup crushed seasoned croutons
1/4 cup chopped sweet onion
1 egg, lightly beaten
2 cloves garlic, chopped
3 tablespoons Worcestershire sauce
1 tablespoon prepared yellow mustard
1 teaspoon red pepper flakes
1 teaspoon Cajun seasoning
1 teaspoon extra virgin olive oil
1 tablespoon butter
DIRECTIONS
In a large bowl, mix the ground beef, croutons, sweet onion, egg, garlic, Worcestershire sauce, mustard, red pepper flakes, and Cajun seasoning. Form the mixture by hand into meatballs.
Heat the olive oil and melt the butter in a skillet over medium heat. Place the meatballs in the skillet, and cook, turning constantly, 20 minutes, or to desired doneness.

This is the best recipe for meatballs I have ever had.....
Extra-virgin olive oil
1 onion, chopped
2 garlic cloves, smashed
2 tablespoons roughly chopped fresh parsley leaves
1 cup milk
4 thick slices firm white bread, crust removed
1 1/2 pounds ground beef
1 1/2 pounds ground pork
1 large egg
1/2 cup freshly grated Parmigiano-Reggiano, plus more for serving
Kosher salt and freshly ground black pepper
4 cups heated Pomodoro Sauce, recipe follows, or good quality jarred tomato sauce
1/2 pound mozzarella cheese, cut into chunks
Leaves from 3 sprigs fresh basil
1 pound spaghetti
Bring a big pot of salted water to a boil for the spaghetti. Heat 3 tablespoons oil in an ovenproof skillet over medium heat. Add the onion, garlic, and parsley and cook until the vegetables are soft but still translucent, about 10 minutes. Take the pan off the heat and let cool.
Pour enough milk over the bread in a bowl to moisten and let it soak while the onions are cooling. Combine the meats in a large bowl. Add the egg and Parmigiano and season generously with salt and pepper. Use your hands to squeeze the excess milk out of the bread and add that to the bowl along with the cooled onion mixture. (Hang onto the pan - you'll need it to cook the meatballs.) Gently combine all the ingredients with your hands or with a spoon until just mixed together. Don't overwork or the meatballs will be tough. Divide into 10 equal pieces and shape them into 10 nice looking meatballs.
Preheat the oven to 350 degrees F.
Heat a 3-count of oil in the frying pan over medium heat and brown the meatballs on all sides, about 10 minutes. Put them into a baking dish and spoon about half of the tomato sauce over. Shower with the mozzarella and drizzle with olive oil. Put the meatballs in the oven and bake until the meatballs are cooked through, about 15 minutes.

When making home-made meatballs, mix ground beef, onion soup mix, salt and pepper to taste, eggs. If the mixture is too moist add some bread crumbs to the meat mixture. Then proceed to pinch off a small section of meat mixture, roll into a ball. Do this until all meat has been rolled into balls. Then heat a large skillet. Add single layer of meatballs into skillet. Cook approx. 2 minutes then roll meatball over. Do this until meatball is browned on all sides. The meatball when cooked will feel heavier than when uncooked. Then take meatballs out of skillet. Be sure to drain well and then add to your spaghetti sauce. Simmer 15 to 20 minutes or so, then top your spaghetti with sauce and meatballs and enjoy.

After you have your meatball mixture rolled into meatballs you can do two it two ways.
1. Fry then in hot oil til brown on all sides. Only do it this way if your are going to finish cooking them in your spagetti sauce. They will need at least 1/2 - 1 hour in the sauce.
2. If not cooking sauce put them in your oven at 350 for 20-30 minutes.

2 pounds lean hamburger
oregano
basil
italian blend
pepper
salt
seasoned (italian) bread crumbs (just shake some in - 1 to 2 cups)
1-2 eggs
**don't forget the garlic**
mix it all up together, they roll into balls and drop into boiling water, when they float they are done.
I do not cook them in oil, they are already fattening enough. I boil mine in a big pot of water and when they float to the top they are done. I take the meatballs out of the water and brown them lightly in a hot skillet, no need to add oil because they are already wet. they are not at all greasy. The grease is in the water. I use these to make hoagies or in sauce for spaghetti. They are great this way. I can't stand all the grease the other way.

Wow!! I didn't know so many people fried theirs. I have never nor will I ever. I cook mine right in the sauce. Homemade, so I cook it all day.
1 lb. ground beef -----
about 1/2 cup seasoned bread crumbs -----
1 egg --- Parm. cheese to taste ---- garlic powder, onion powder, salt, pepper, oregano, basil, and rosemary. Can include any spices you like. Don't use garlic or onion salt or it will be to salty. Always use the powder. Roll into whatever size meatballs you would like and drop them in the sauce to cook. If you use good ground beef there will be very little grease in your sauce. Also through in some sausage, cut up into 3 to 4 inches, Hmmm!! Yummy. In fact today I'm making stuffed peppers from scratch. My own tomato's and peppers. Now I'm getting hungry.

Spaghetti and Meatballs
INGREDIENTS:
1 1/2 pounds lean ground beef
1/2 cup fine dry bread crumbs
1 egg, slightly beaten
1/4 cup grated Parmesan cheese
3 tablespoons warm water
1/2 teaspoon dried leaf basil
1/4 teaspoon pepper
vegetable oil
Sauce:
2 cans (14.5 ounces each) diced tomatoes
1 can (6 ounces) tomato paste
1/4 cup chopped onion
2 cloves garlic, minced
2 tablespoons chopped parsley, or 1 teaspoon dried parsley flakes
1 teaspoon salt
1 teaspoon leaf oregano, crushed
hot cooked spaghetti or linguine
PREPARATION:
Combine ground beef with bread crumbs, eggs, Parmesan cheese, water, 1/2 teaspoon basil, and 1/4 teaspoon black pepper. Shape into about 3 dozen 1-inch meatballs. In a large skillet or Dutch oven, brown meatballs over low heat in a small amount of oil. Drain off excess fat. Add tomatoes, tomato paste, onion, garlic, parsley, salt, and oregano. Simmer, uncovered, over low heat for about 1 1/2 hours, stirring occasionally. Serve with hot cooked spaghetti or linguine.

3/4 C rolled oats (oatmeal) 1/4 teaspoon pepper
2 Tablespoon fine Chopped Onion
1 egg 1/2 C milk
Mix all together. Then form into small balls and brown in skillet.
