we are having breakfast for dinner tonight. I need some great ideas. Something alittle different.

Here are some different ideas for you:

Country Breakfast Casserole

INGREDIENTS
1 (16 ounce) package breakfast sausage
1 chopped green onion
2 cups shredded Cheddar cheese
6 eggs, lightly beaten
1 cup water
1/2 cup milk
1 (2.64 ounce) package country gravy mix
6 slices bread, cut into 1 inch cubes
2 tablespoons melted butter (optional)
paprika to taste (optional)
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Grease an 11x8 inch baking dish.
Brown sausage in a large skillet; drain fat.
Combine sausage with green onion and spread evenly across the bottom of the baking dish. Top with shredded cheese. Whisk together eggs, water, milk, and gravy mix; add mixture to baking dish. Arrange bread squares evenly on top. If desired, drizzle melted butter over bread, and sprinkle with paprika.
Bake 40 minutes in the preheated oven, or until a knife inserted into the center comes out clean. Set aside 10 minutes before serving.

Ham 'N' Egg Tortilla Bake

INGREDIENTS
1 cup sliced fresh mushrooms
1 medium onion, chopped
1/2 cup chopped green pepper
1/4 cup butter or margarine
6 eggs
1/4 cup milk
1/4 teaspoon pepper
1 cup cubed fully cooked ham
1 (10.75 ounce) can condensed cream of mushroom soup, undiluted
10 (8 inch) flour tortillas
1 1/2 cups shredded Cheddar cheese
DIRECTIONS
In a large skillet, saute the mushrooms, onion and green pepper in butter until tender. Meanwhile, in a bowl, whisk together the eggs, milk and pepper; add the ham. Pour into the skillet. Cook and stir over medium heat until eggs are completely set.
In a greased 13-in. x 9-in. x 2-in. baking dish, spread half of the soup. Place 3 tablespoons egg mixture down the center of each tortilla; sprinkle each with 1 tablespoon cheese. Roll up and place seam side down over soup.
Spread remaining soup over tortillas. Sprinkle with remaining cheese. Bake, uncovered, at 350 degrees F for 20-25 minutes or until heated through.

Ham N Egg Pizza

INGREDIENTS
1 (8 ounce) package refrigerated crescent rolls
3 eggs
2 tablespoons milk
1/8 teaspoon pepper
2 cups finely chopped fully cooked ham
1 cup frozen shredded hash brown potatoes
1 cup shredded Cheddar cheese
1/2 cup shredded Parmesan cheese
DIRECTIONS
Unroll crescent roll dough and place on an ungreased 12-in. pizza pan. Press onto the bottom and 1/4 in. up the sides, sealing seams and perforations. Bake at 375 degrees F for 5 minutes.
Meanwhile, in a bowl, beat eggs, milk and pepper. Sprinkle ham, hash browns and cheddar cheese over crust. Carefully pour egg mixture over cheese. Sprinkle with Parmesan. Bake for 25-30 minutes or until eggs are completely set.

You could do a Strada:

take 12 slices of bread and butter both sides and place 6 slices in a 9 x 13 baking pan, cover with 1 lb bacon fried crisp and break the slices in half or you may use ham slices or crumbled breakfast sausage patties, spread grated sharp cheddar cheese over the top and put on the last 6 slices of bread. Then beat up 6 eggs with 1 cup cream/or whole milk and pour on top of the whole casserole. Bake covered with tin foil for about 1 hour in a 350 degree F oven.

How about a nice Frittata

3 tablespoons olive oil
1 onion, finely chopped
1 clove garlic, crushed
2 small potatoes, diced (about pea size)
1/2 cup diced ham or other meat or shrimp
1/4 cup diced red pepper
1 small tomato, seeded and diced
6 eggs, beaten
1/4 cup chopped parsley
1/4 cup shredded parmesan cheese or other type of cheese
salt and pepper to taste

Heat the olive oil, add the onion and garlic and cook until softened.
Add the diced potato and cook until browned.
I put the skillet lid on now and allow the potatoes to cook completely through-about 10 minutes.
Add the ham, pepper and tomatoes, and cook uncovered for a further 2 minutes.
Mix the egg, parsley, parmesan cheese, salt and pepper to taste, together in a bowl, then pour over the ham and vegetables in the pan.
Cook over a gentle heat for about 6 minutes or until just set.
Place under your griller (broiler) to brown the top, then serve immediately, cut into wedges, or allow to cool and serve cold.

If it were up to me, I'd have breakfast 24-7-365! ;)

You didn't say whether this was a romantic evening for two, or just a bunch of the guys getting together, which may have affected the results.

How about some sort of breakfast burrito. Scramble some eggs with peppers and onions - add chorizo if you like - and roll into soft flour tortillas with some grated cheese. Use your favorite salsa to dip them or put some salsa right into the burrito.

How about a cheesesteak omelet? Yum!

CHEESE STEAK OMELET

1 portion Thin Sliced Steak
1.5 oz. Onions (sliced thin)
1 slice Swiss American Cheese
2 T Vegetable oil
1 T Water
3 ea. Eggs (Large)

PREPARE
Preheat griddle to 350 degrees F. Apply 1T vegetable oil to griddle, add sliced onions, and top with steak. Moisten meat with remaining vegetable oil and water. Cook until edges of steak turn brown. Turn steak/onion mixture and gently toss to disperse onions. As the steak/onion mixture is cooking, start your omelet. When the omelet is ready, add the steak/onion mixture, top with cheese and fold omelet in.
