When the very end of summer and fall start garnering cooler weather and chilly nights, I look for my favorites. Usually, I like most any dish if Mash potatoes and gravy are involved. Beef stew, is another, and I can't wait to make some Shepard's pie.
Meatloaf is always a favorite at my house as well as meatballs. And when the mood is right I love to have Lasagna, with garlic cheese bread :o)

A nice bowl (or two, or three) of Poblano Chicken Chowder - MMmmm!

Poblano & Chicken Chowder

Ingredients
¼ cup olive oil
4 large carrots, diced
5 stalks celery, sliced
2 large white onions, diced
3 poblano chile peppers, diced
***1 red bell pepper, diced (optional)
***1 medium potato, diced (optional)
***½ cup frozen corn kernels (optional)
1/8 cup minced garlic (more to taste)
1 tsp salt
½ tsp ground white pepper
½ tsp cumin
¼ tsp thyme
2 tbsp chicken bouillon
3-4 quarts chicken stock/broth
½ bunch cilantro, chopped
2 cups chicken, cooked and shredded
1 cup heavy cream
1 tsp Frank’s Hot Sauce
Roux:
1 stick unsalted butter
¾ cup flour

Directions
Heat olive oil in large stock-pot. Add carrots, celery, onions, poblanos, (bell pepper, potato, corn – if using) and garlic – sauté for 7-8 minutes. Add salt, white pepper, cumin, thyme, bouillon and cook for another 2 minutes. Add chicken stock/broth and cook another 5-10 minutes (until carrots are tender). Add cilantro and chicken. Remove from heat and stir in cream and hot sauce.
Make roux: melt butter and stir in flour to make a paste – then add a few ladles of the soup liquid, stirring to prevent lumps. Add this back into the soup, stirring to incorporate.
Serve.
Note: As with any recipe, you can adjust amounts of spices to suit your tastes.

Pretty much anything with brown gravy. :).
