Vegetarian....maybe with black beans and corn? We have a lot of tomatos because we grow them in our garden and I wanted to make some salsa with it, anybody have an recipes?

My boyfriend makes this very simple salsa every week and everybody loves it. It doesn't have black beans and corn in it, but you could throw those in there if you want. I think what makes it so good is how fresh it is.

• 6 to 8 small roma or plum tomatoes. I suppose you can use any type of tomato, but that's what he uses.
• 1 large white onion.
• 1 medium jalapeno pepper.
• Fresh cilantro (you can use as much or as little as you like.
• The juice of 1 small lime.

With the tomatoes, you want to get all the seeds and pulp out of them before you chop them. Chop the tomatoes and onion in small cube-like pieces (this salsa is similar in consistency to pico de gallo rather than the pureed salsa you get out of a jar.). The cilantro and jalapeno should be chopped into tiny pieces. Mix all chopped ingredients together in a large bowl, squeeze the lime into the bowl, then mix again.

We just serve it with regular tortilla chips, but it goes on almost anything. He gets a lot of compliments on it too.

2 cups tomatillos (little green tomatoes with a husk)
2 cups tomatoes
1 cup onion
1 bunch cilantro tops
4-8 de-seeded Jalepenos
1/4 cup olive oil
1/3 cup red wine vinegar


Chop everything up to the size you want it to be and dtir it all together. I like mine chunky. Sometimes I throw in some bell peppers (orange to add more color). You could easily add some corn or a can of rinsed black beans to this recipe.

The Corinthian's SALSA FRESCA

Ingredients
5 cups ripe tomatoes, cored and finely diced
4 jalapenos, seeded, cored and minced
1 medium white onion, finely diced
1 medium red onion, finely diced
1 medium yellow onion, finely diced
1 green bell pepper, cored, seeded and finely diced
1 red bell pepper, cored, seeded and finely diced
1 yellow bell pepper, cored, seeded and finely diced
1 orange bell pepper, cored, seeded and finely diced
2 poblano peppers, cored, seeded and finely diced
1-2 habanero, cored, seeded and minced
1 cup canned tomato sauce (garlic flavored)
1 tsp salt
1 tsp minced garlic
1 tbsp dried cilantro
1 tsp epazote
1 tsp chipotle pepper powder
1/4 tsp cayenne
1/4 tsp cumin
1 tsp parsley
2 tbsp red wine vinegar
1/2 tsp Frank's Red Hot Sauce

Directions
In a large bowl, combine all ingredients. Stir to mix well.
Cover and refrigerate for at least one hour.
Taste for seasoning, add more salt if desired.
*Note* I try to dice all to 1/4-inch dice.

(I'm sure I wouldn't mind if you wanted to add some corn or beans, that's up to you)
